WHen is best time to harvest? Can I preserve sunchokes? I'm excited about them, but don't know what I'm doing

Best thing to do if your area allows is to harvest as you need them. Here the ground doesn't freeze more than an inch even in the worst of winters. So mine stay in the ground. If you choose to dig them up, understand the health benefit will be lost the longer you store them. Otherwise store them like potatos.

Wait till frost kills off the tops! Then dig up and transplant the roots. Just beware that you will be battling the artichokes in the current spot for a while! Just takes one tiny piece left behind....

I don't mind volunteers. Only flowers or lettuce will replace them, as it's a bit too limited in sunlight where they are. I plan to put them on the northern edge of my garden. Thx
