It really depends. I generally like acidic tomatoes (especially if they make my scalp tingle). I like sweet tomatoes that are also acidic. I like super sweet tomatoes. I like rich-tasting tomatoes that don't classify as sweet or acidic. I like tomatoes with good texture even if the taste isn't surprisingly good.
For taste, I like Tatura (harvested when it's cold), Green Giant (grown in full sun), Early Girl F1 (practically dry-farmed in full sun, without lots of potassium), Pruden's Purple, Mountain Princess (with little water), Burpee Gloriana, and plenty of others (Green Tiger, Poca Roja, Ron's Carbon Copy, etc.)
For texture, I really like Thessaloniki, Sausage, Green Pear, Creole, German Pink, Sub Arctic Plenty, some F2+ Husky Cherry Red hybrids, and that's all that comes to mind at this time.
I prefer red tomatoes most, but brown, purple, dark pink, green, orangish red, and pink are pretty good, too.

Acidic/sour/tart tomatoes tend to be my favorite, but I like sweet tomatoes, too. I also like sweet and sour tomatoes (the ones that taste like Sweet Tarts). I like tomatoes with potent flavor. Mild tomatoes can be good, though, but most tomatoes are mild. Sour tomatoes are a lot harder to find.
