Lemon Balm. It's a Perennial and an easy one to grow at that. Yes, I know, sometimes too easily cloned all over the yard. It's tasty as a hot tea; it's minty in a glass sweet tea. In a hot bath, it becomes Aromatherapy. And it's rumoured to have calming effects on those who have Anxiety or Hyperactivity disorders. Aside from it's ability to run throughout the garden, what's not to love?

Hard to pick one (like picking a favorite pepper!), but if I had to, it would be basil. I could grow Italian and Thai, since they are the same species, right? ;D

Basil, hands down. Basil is more than just the main ingredient in pesto. I grow at least 12 varieties every season and use it for everything from salads to soups to casseroles to jelly.

I couldn't possibly pick "just 1" to grow. Too many useful herbs. Each one having its own distinct use in the kitchen (not to mention the medicine chest, and other uses). If I had to choose, just out of spite, I'd probably pick an illegal one.

I have always been teased about my allergies to illegal herbs they make me pass out in 30sec - 30 mins going from standing to falling in 1.0 secs I have many many medicinal ones that I could not live without tho calendula mullein ginseng the list goes on an on ;D

If you could only grow one, what would it be? What is this Sophies choice?!?!?! I couldn't begin to choose just 1! Theres the plantain and jewelweed I use all summer. Dandelion is way yummy mixed in salads, nasturtiums too, then my rosemary I love, parsley, oregano, sage, dill, chives, borage, nonononono, couldn't pick just one! If I didn't do catnip plants there'd be a revolt! Mr likes chamomile for tea, lemon balm is a summer must have too. (yah it is an invasive little sucker but still.) Monarda for my hummers and bees, need lots of that! DONT MAKE ME PICK ONE!!!!!

If horseradish counts as an herb its one thats popular in this kitchen. I'll confess to buying more often than growing.

Once you establish horseradish, it will grow forever. Harvest enough to keep it from taking over your entire garden!

My favorite is Thai basil. It adds so much unique flavor to food. I freeze it in ice cubes for winter.
