brownrexx , I plumb forgot tuna salad. No Sir, don’t like it either. I don’t eat anything Mayo based. I knew an ol’ lady one time, she got sideways at me cause I wouldn’t eat her tader salad. Kept telling me it was made with mustard. I told her I didn’t take to eating mashed taders with mustard. None of those dishes are appealing to me cause they look like cat vomit. You can’t go by me though. If you look my name up in the dictionary, it says cantankerous old sheet that don’t know nuthin. Hahahaaaaa! Well you obviously don't know what cat vomit looks like. I have 2 cats and I know EXACTLY what that looks like and it isn't potato salad!

Well, let’s see. What’s for supper? Don’t know exactly. Maybe chicken pot pie. Something easy for sure. Might just open a can of soup or something. I think Mom said she wanted a grill cheese and some French Fries. Wife’s in there now cooking herself a pork chop. I didn’t want either of those, so I was told to hurry up and decide. You can’t rush supper, you can rush through breakfast and you can rush though lunch, but supper demands some thinking bout. I’ll think of something dreckly.

Snowing and blowing and bitter cold so I made Small Batch brownies. 8 ingredients and 25 minutes later they were ready. It makes 4 large brownies and we ate the first 2 right out of the oven. The other 2 will be after dinner. Dinner will be left over Turkey pie with acorn squash/ butter/ honey on the side. 20220312_151505 (2) by Brownrexx, on Flickr We have zero willpower with brownies so that is why I like this little recipe. ¼ c. melted butter ½ c. sugar 1 large egg ½ tsp. vanilla extract ¼ c. flour 3 tbsp. unsweetened cocoa powder 1/8 tsp baking powder 1/8 tsp. salt 1. Combine slightly cooled melted butter and sugar and mix well. 2. Add egg and vanilla. Mix well. 3. Add flour, cocoa powder, baking powder and salt. Stir until just combined. 4. Pour batter into a lightly greased 9x5” loaf pan. 5. Bake at 350° for 20 – 21 minutes for fudgy brownies.

brownrexx, Oh yeah, I’m saving that brownie recipe! You know I’m weak when it comes to brownies. I will throw a handful of pecans in though. I’ll switch out the regular sugar for coconut sugar cause I seem to do better with it. I also found a liquid sweetener that’s 100% made from apples. It’s freakishly sweet, but doesn’t spike your numbers. I now use it as syrup on the rare days I eat a pancake. Thanks @ brownrexx!

Soup weather today! I trimmed a bunch of that cutting celery in the hydroponics, and I got the idea for a soup. I used mostly the stems, in the mirepoix - the leaves I'll use in something else. Leaf celery trimmed from the hydroponics. by pepperhead212, on Flickr I made a batch of mushroom barley beef soup, and I put a couple cups of cubed butternut squash, leftover from the last thing I made with it. I didn't have any fresh mushrooms, but had about 1/2 c duxelles in the freezer, which is about a pound, cooked down. Hubs wanted egg salad ICK I had an apple I ate a few French Fries. I wasn’t real hungry. I always share an Apple around 8pm with Baby Girl & Punky Brewster. They get most of it, I normally only get about 1/4 of it if I’m lucky. If I want more, I’ll peel another, but it’s rare we eat two. I say rare, about once or twice a week we’ll do double apples. I buy whatever apples happen to be on sale if I think they look good. I never buy red delicious no matter the price. Too mealy to suit me. Lately an Apple called Kanzi and another called Envy have been .87 per pound and both of those have tasted pretty good to me, but Punky didn’t care for the one called Envy for some reason. She took a bite and left the rest. I’m not sure why.

Last night I made my favorite shrimp meal, confetti shrimp, and I forgot to post it. One has an open bag top and has all the center leaves intact, everything you could want! The other brand has the celery tops chopped off straight across in a sealed top. So you don't even get the tender tips of celery, and probably very few inner leaves.
Guess which bag costs at least a dollar more? So you're paying more to have someone remove the best parts??? I suppose some people only want to buy what's in a sealed bag?

We don’t eat much celery. I think the only time I can remember using it, is to put in Dressing on Thanksgiving.
On another note, have you ever noticed when you go to a dinner party, someone always cuts up a bunch of celery, carrots, broccoli, cauliflower and such and there it sits on the table. You ever see anyone eat that crap? Oh there might be one or two rabbits out of a hundred people, but generally most of it is still there when the party is over.
At least down cheer that’s the way it be.

That's because of that horrible dip that is usually with it. You know, that ranch dressing, or something like that. If the dip is good, the veggies are just spoons, to eat the dip! But to keep them from eating it too fast, I put enough peppers in it, to slow them down.

I made a salad today, since it was hot out (well, maybe not hot, but like late May around here!). I cooked some whole mung beans and chana dal, and added some diced potatoes (got a little too soft for a red potato, in that time), a large diced red bell pepper, plus some scallion greens, cutting celery, dill, and parsley from the hydroponics. I drained a can of kippered herring (got a bunch of these from Ocean State Job Lots, for $1.49 with a digital coupon), and chopped them up, and chopped 5 frozen Thai peppers, and stirred all this together, with a couple tb of toasted sesame seeds. The dressing was a simple EVOO and white wine vinegar, a little soy sauce and Worcestershire sauce, and black pepper, as always. Delicious! Could have put more heat in it - maybe tomorrow. I also made some breadsticks, with the new yeast I just got, because I noticed that the old yeast was showing its age, the last couple of times I used it. It rose incredibly well, as always, when new, and I didn't even use the usual amount. I keep it in the fridge, and the "best by" date I wrote on the label was 5-22, but I definitely needed to replace it. Only wasted a few tb, so most was used. I made a type of chili tonight, with some chorizo, brown lentils, and oat groats. I also put some leftover diced butternut squash in it, to use it up. I seasoned it with onion, a little of the coriander/cumin mix I frequently use in Indian cooking, and 4 different ground chiles. The liquid I made with some soaked and blended tomatoes - didn't want to open a can, for this amount. The chorizo had enough garlic to season the dish. I thickened it with a little masa harina, like I always do chili. Lentil chili, made with oat groats and chorizo. by pepperhead212, on Flickr

brownrexx, That chowder sounds really good. I opened a can of chicken noodle and warmed it in the microwave. I skipped breakfast, I had a few crackers and some left over chili for lunch. It was a very unusual day. I normally have a nice breakfast around 9 and then I’m good till supper which is around 3pm. Baby girl is starting to ask for her Apple earlier and earlier every evening. We ran out of apples during the week, so I would give the poochyhounds a spoonful of peanut butter for their 8pm snack. She and Punky Brewster didn’t mind the peanut butter, but big boy didn’t like it at all. Luckily, we were only out for 2 nights. I’ve gotten to where I just dread going to the store. The ride darn near kills me, then you have to put up with all the people at the store. The apples this week were sort of bitter. I guess tart is a better word, but they definitely weren’t sweet. The kids noticed it too. We normally like Fuji, but we must have picked the wrong variety this week. NO APPLES were on sale this week. I paid nearly 3 bucks a pound. I can usually find a variety for around a buck a pound, but I guess with the current situation, everything is going to be a bit more expensive for awhile.

Me and the girl went to Applebee's and I had some sort of honey crispy chicken on pasta thing? No clue. Rosie ordered it, said she had it before, that it was really good, (it was) so I got what she got? Hubs got left overs! He hates Applebee's so don't feel sorry for him.

I took some drumsticks out of the freezer (mainly because I just put in 3 more vacuum seal bags of some I got on sale at Aldi), and cooked it in the IP, then sort of shredded the meat (and put the skin and bones back in the IP, to make some broth). I had some leftover brown rice and barley in the fridge, and I used that, and some thawed green beans from last summer, and about 2/3 of that chicken meat, in a fried rice. I started with about 2 tsp minced ginger, and a large clove of garlic, minced, plus a tb of Szechwan chili paste, and a large scallion, chopped up. I made a mistake and forgot to turn my range hood on, and choked myself, with that chili paste! I added about 2/3 of that scallion early on, with the rice and soy, and the rest at the end. As usual, when I have leftover, I chop just enough cilantro for the present serving, and more, when I reheat the rest.
