On New Year's Eve I made pizza from scratch and realized that I had enough dough for another pizza, so I froze it. Today I removed the dough from the freezer, and it made a really nice free form pizza for dinner with fresh mushrooms and some of my peppers from the freezer. 20230210_163954 by Brownrexx, on Flickr

I felt like making something in the Instant Pot last night, so I made a Chicken Burrito Bowl. So easy. I made layers of chopped onions, diced chicken breast, minced garlic, chili powder, cumin, salt & pepper, garden corn from the freezer, home grown red beans, diced tomatoes, basmati rice and then a cup of chicken broth over all. Cooking time was 5 minutes and then after a 10 minute cool down period, I stirred everything together and added shredded cheese. I have not made this dish for quite a while and we enjoyed it. We have not eaten at a restaurant for Valentine's Day in many years. I like to make something special at home though and tonight I made one of hubby's favorites, shrimp scampi, rice pilaf and garden peas from the freezer. I wanted a fancy dessert that I didn't have to make so I headed to Wegmans, and they didn't disappoint with these individual fruited cheesecakes! I received a gift of Ghirardelli chocolates and DH was given a family pack of Oreos. I love Valentine's Day. It's fun. I made some salad today, with some chickpeas, kidney beans, and some oat groats, cooked in the Instant Pot, draining them, and rinsing with the cold water, when done. While cooking those things, I got some sardines broken up, some feta diced up, a large bell pepper diced, a small piece of celery, chopped, a scallion chopped up, and a couple of green Thai peppers, minced up, along with some parsley. Then I mixed the beans and oats in, with just a simple olive oil and white wine vinegar, with some fish sauce, and a generous amount of fresh ground pepper, for the dressing. I just ate this rolled up in some of those pieces of the leaf lettuce, from the hydro. Salad, with chickpeas, kidney beans, oat groats, sardines, bell and hot peppers, feta, and a few other things. by pepperhead212, on Flickr

I have experimented with different chili recipes and sometimes they are just OK and other times we don't like them. Yesterday I was reading some recipes online and saw one from Taste of Home that I made tonight and we really liked it. It was made in the crock pot and I used 2 jars of my home grown red beans that I cooked previously and froze in Mason jars. I added some shredded mozzarella on top. That thing about the millets a couple of days ago made me think of something I've done often with millet - cooked it with jasmine rice, to give some nutrition to it. Amazingly, the flavor of the millet is incredibly mild, so the jasmine flavor is still strong. And I often do this with Thai curries - something I don't make as often as I used to. But I still had about 3/4 of red curry paste in the freezer. For cooking the millet and jasmine rice together, I soak the millet for a few hours, drain, then add about 1½ c water per cup, and 1:1 water to rice, and use the RICE mode in the Instant Pot, and it comes out perfectly. I made a creole type dish today, including some bell peppers I had to use, plus some mushrooms, and some ham, from the freezer. I made the tomato sauce, and simmered it briefly, then stirred in the leftover millet/rice mix I had with the Thai curry. I let it sit about 5 minutes, to absorb some of the liquid. Almost the same as jambalaya, w/o shrimp. We had fresh caught fish fillets last night, made in the air fryer. Since Jim had four stents put in his heart this winter, I've been avoiding pan frying fish in oil as I used to do. Found an air fryer recipe that called for dipping fillets in egg, then rolling in a mix ratio of 1/3 bread crumbs, 1/3 potato flakes, 1/3 Parmesan cheese sprinkles. Spray with olive oil for browning. I found that was too Parmesan tasting for me, but when I didn't add it, the fillets did not brown as well for looks. The problem is getting the thin fillets to brown for color, before they fall apart because they cook so quickly. I keep fiddling with the recipe, my last attempt used only 1/2 the Parmesan as before, and I think that went well. I also replaced the egg dip with brushing the fillets with a little mayo before rolling in the crumb mix, as well as adding a little extra paprika to the mix for color. Crumbs stayed on better, and a little extra flavor. Funny -- it was almost impossible to find a box of plain unflavored potato flakes! All the stores carry now are the instant pouches or small boxes of flavored potatoes. I finally happened upon a medium sized plain box of flakes at Aldi's.
I ate the last two left over fillets cold on a toasted bagel with cream cheese for breakfast, and they tasted really good!

I had to trim those greens in the hydroponics, and got a large amount of them, and it almost looks like I didn't cut any! I made some Indian food - a one dish meal, based on a dal and rice dish, cooked together, but I used some whole oats, instead of the rice. I cooked those together, with some sambar masala and some turmeric, in the Instant Pot, on low pressure, to keep the oats from "exploding". While cooking that, I cooked an onion in some ghee, and several minced cloves of garlic, plus some tomato paste, cooked a couple of minutes,then added some sliced mushrooms, and cooked several minutes, on medium high. Then I added the chopped greens - about 4 quarts - then cooked them down, about 2 minutes. Then I stirred it into the dal, along with a generous amount of chopped cilantro, then simmered it a couple minutes longer. I had some broccoli florets to use up, along with some red bell peppers, so I made a one dish salad, using those, and some barley and channa dal, and I made some pesto, from the hydroponics basil. I also added some garlic chives at the end, which are starting to grow out there now. I cooked it all in the Instant Pot, the barley first, then the dal, then just steamed the broccoli, while getting the rest of the ingredients ready. I kept seeing recipes for Irish potato cakes and I never tried those so when I saw them made from scratch at my local market, I bought 2 for last night's dinner. I also picked up some fresh haddock and broiled it and I made a pot of creamy tomato soup from my frozen tomatoes. It tasted so fresh. I always make potato cakes after Thanksgiving but mine are just plain potatoes, made into cakes and fried in butter. Irish Potato Cakes can have an egg, flour, cheese or milk added. Sounds yummy. I have been eating leftovers yesterday and today. But Thursday night I made Mediterranean-Style Garlic Shrimp with Bell Peppers, which is (shrimp lightly sautéed and then served in a olive oil, butter, chicken broth, and white wine sauce with garlic, onion, tomatoes, bell peppers, and parsley). I served it over rice cooked in chicken broth, a bit of garlic, butter, and parsley, since I wanted the rice to have some flavor as well. It was a lovely light meal...I should have taken a picture. Next time I have been asked to use half or whole canned tomatoes instead of diced so my kids can pick around them easier ![:P](//storage.proboards.com/3247375/images/uJ3wHzVudwy0q4vAqilQ.png) , but they did eat the meal and had no other complaints. But I think I will also increase the bell peppers next time. Mine didn't seem to have nearly as much bell pepper in it as shown in the recipe photo online. And since the bell peppers were only lightly cooked and still had some texture, they added a nice tender-crisp element to the dish.

Today I made some boiled peanuts to snack on, these I seasoned with chipotles and moritas, plus a little ground cumin and coriander - a spice mix I make for Indian cooking, but I use it in Mexican cooking, too. I also added some dried tomatoes, and blended those smooth with some dried moritas and a couple of canned chipotles, plus about 2 c water. I emptied that onto the lb of raw peanuts, and pressure cooked them in the Instant Pot for 45 minutes, and let the pressure release naturally. I've never seen boiled peanuts prepared that way. (Down here no one adds anything but salt to boiled peanuts.) How did you like them? With all of the protein from the peanuts plus the tomatoes and chipotles in there, that could be considered a nutritious meal instead of a tasty snack. Laura_in_FL I always add something to flavor boiled peanuts, although I do like the flavor of them on their own. The chipotle are probably my favorite ones, though there are some Szechwan flavored ones I like a lot, too, and I've added 5 spice flavor to them, too, as well as Indian spices. There was also a Thai flavored boiled peanut I made once, but that wasn't with raw peanuts. And I ate about 3/4 c of those for breakfast this morning, thinking the same thing you mentioned about it being fairly nutritious.

brownrexx , my mother's side of the family is heavily Irish and my mother made potato pancakes like that out of leftover mashed potatoes. She would definitely add egg, milk, and maybe some onion powder, salt & pepper.

I made a Mexican dish today, started in the Instant Pot with a chopped onion in some oil, followed by some minced garlic and some Mexican oregano, followed by some guajillo and some morita flakes, cooked for about a minute. Then the liquid was added - I had about 3/4 oz of dried tomatoes, soaked in 2 c hot water, then blended smooth, with 3 canned chipotles. The blender was rinsed out with 3 more cups water, and added to the IP, along with 1 c channa dal, and 1/2 c kamut (just to use up the end of the jar). I seasoned it with some salt, that cumin/coriander powder I use for Indian dishes, and set to pressure cook 15 minutes, then let the pressure release naturally. While cooking, I cut up a lot of those greens - all of the arugula and kale, cutting off the tough stems, and most of the mizuna, that doesn't have tough stems. I just cut them into about 1/2" pieces. I got about 3 qts of pieces I added to the lentils, and cooked it down about 15 minutes. Then I made some tacos, on some corn tortillas, toasted on an open flame, along with some queso fresco, and some leaf lettuce. I cooked my St. Patrick's Day meal last night because we will be out of town on Friday. I love corned beef and I cook it all day in my Crock Pot but I don't really like boiled veggies with the meat so I sauté onions and cabbage in butter and I make potato cubes with butter and dried chives. It was a good meal and tonight will be Rachael sandwiches. I don't like sauerkraut so I make grilled corned beef and swiss on rye but with coleslaw instead of kraut. 2023 by Brownrexx, on Flickr

Dh and I like the corned beef and vegetables, but the kids won't touch it. So rather than buying a corned beef and having to eat leftovers for a week, I may just buy a Reuben sandwich on Friday to get my corned beef and cabbage fix.

Roast drizzled with jus, homemade potatoes au gratin, garlic and shallot green beans garnished with Parmesan cheese, and there was a green salad, not shown. We also had pound cake, strawberries, and whipped cream for dessert. Since we were eating a special meal, I pulled out the fine china, crystal goblets, white tablecloth and matching napkins with napkin rings. (Yes, the silverware is arranged incorrectly; I should have supervised my son while he was setting the table.) Most of the roast was medium doneness. If it had been just up to me I would have cooked the roast medium-rare, but most of the family prefers medium. Everyone else beat me to the roast, so I ended up with a medium-well piece from one end of the roast. But it turned out great anyway - even my medium-well slice was still incredibly tender. The steak knives were complete overkill; we could have easily used butter knives. I tell ya, if Publix puts these roasts on a great sale again this Christmas, I am going to buy and freeze as many roasts as I can cram in my freezer. Sooooo good! I saved the bones and the (very few!) scraps of meat that were left, as well as the remaining jus. The leftovers are going to make the flavor base of a very fine beef soup next week.

I made a gumbo style rice dish tonight in the Instant Pot, but not quite a one pot meal, as I cooked some chopped up greens to add at the end. It started with cooking a large onion, a yellow and a green bell pepper, and some celery, all chopped up, and after cooking several minutes, adding a generous amount of minced garlic, plus the usual spices - cloves, ground bay, thyme, and some heat, from Thai pepper flakes. Cooked that a couple of minutes, then added the homemade andouille like sausage, made with venison (liquid smoke in that, not smoked). Cooked on high sauté about 8 minutes, then added about 2/3 c white vermouth (emptied the bottle) - something I add to my jambalaya all the time. I cooked briefly, then added 1 1/2 c brown rice, a little over 1 1/2 c water, adjusted the salt, then set to pressure cook on low for 25 min, which is just right for brown rice. While cooking, I chopped up about 6 c of misc. greens, ending up to about 4 c chopped, and after cooking it in a wok, in a couple tsp oil, it was about 1 1/2 c. I stirred that in, with about 1/2 c chopped parsley, and let it sit a couple of minutes.
