That looks really good pepperhead212, I made black bean quesadillas last year with CJ cheese and they were also very good. Now that the weather is finally cooling off, I will probably start cooking more with beans and getting out the Instant Pot too. I am still experimenting with it and cooking beans in the IP is something I want to work on.

Hubby had been wanting to go out for pizza and we were planning on it tonight. Now at 3:30 he just called me and said that he is tired from driving today and changed his mind.
Now I need to figure out something for dinner. Maybe a tomato sandwich for him and an omelet for me.

Husband finished off most of yesterday's leftover chicken gravy with peas and mushrooms over rice around 5PM. I wasn't hungry at the time, but around 8PM my stomach was feeling it. Had a sandwich for lunch, so didn't want to repeat that, but wanted something quick. Ended up dicing a 7 inch zucchini and browning it in a bit of olive oil along with some onion, Pushed that to one side, and added two larger good tasting paste tomatoes (Buturoage) in vertically sliced 1/4" slabs. Cooked on higher heat, flipping a couple of times til they were roasted. Then mixed it all together, sprinkled with chopped parsley and garlic powder (have lost my garlic peeler, so was too lazy to take time to peel each clove by hand) and put my linguine noodles on to boil while the sauce blended and reduced a little. Ten minutes later, drained the noodles, mixed and tossed with the fresh tomato sauce, added just a bit of salt and pepper, topped with a sprinkle of Parmesan. So good, I could eat that every night!

small BLT today, used the french bread from walmart pre sliced, and it was just right, though I did put on a lot of lettuce and tomatoes cut thinly. Yesterday, had two of those and though I ate them easily, had a belly ache from eating too much! That's what I get for being a Ms. Piggy!! It was worth it though, but didn't want to be over stuffed again tonight.

Me and My Brother sat out under the shade tree this afternoon munching on smoked Brisket and Sausage. Very nice weather today as we only just now are getting some Sun. It was windy and cloudy most of the day.

I made my favorite meatloaf while I still had a few zucchini left. It contains sautéed zucchini, red and yellow bell peppers, onions, garlic and fresh herbs. I cooked an acorn squash from my recent harvest and added butter and honey. We also had a baked potato from my garden's potatoes. Here is the recipe if you would like to see it. I stopped in a local family owned supermarket today to get some lemons and I remembered that they roast turkey breasts and slice them for the deli. It is $11.99/lb but so worth it and it's not really that expensive when you only buy a few slices. I got 4 nice slices of turkey for only $3.50 and picked one of my beautiful Brandywines and sliced it for turkey club sandwiches. I make a vegetable with every meal and tonight it was one of my favorites which is Baked Parmesan Breaded Yellow Squash and Oven Smashed Okra which is a favorite of hubby's. 20190901_173500 by Brownrexx, on Flickr

I made another curry tonight, and I think I liked this better than last night's (though that was good, also). This had a pound of okra,which was stir-fried with a generous amount of shallots, spiced up with some mustard seeds, sambar masala, turmeric, asafoetida, green chiles, and some curry leaves, with some turmeric as the sour component. It was thickened with some puréed toor dal, which was cooked separately in the IP. I served it with some roti, which was a little dryer than the ones last night - I'm not able to get the texture of those things just right yet, like I can with corn tortillas. Tonight I used another pack of those yellow potatoes that I cubed, blanched and froze a few weeks ago. I had a pack of Hatfield, rotisserie seasoned pork chops so I cooked those and then dumped a pack of the frozen potatoes into the same pan to absorb some of the cooking juices. octave1 , dirtguy50 I did not thaw the potatoes this time and they cooked just fine. For the veggie I sauteed okra, chopped onion and chopped sweet frying peppers in butter and then added a pack of my frozen corn. We both decided that it is worthwhile to freeze cubed potatoes and use them in this way. It cuts down on the cooking time and they taste really good. I have decided to freeze several more packages over the next couple of weeks. Potatoes do not need to be frozen for storage but it turns them into a convenience item for cooking. 20190910_171435 by Brownrexx, on Flickr

Tonight was something that I only make once a year but I love it - Grilled Eggplant Caponata. It is basically a room temperature Italian salad eaten on grilled Italian bread but I didn't have that bread so I used Multigrain bread toasted in the toaster and cut into squares. The Caponata is grilled eggplant, red peppers, onions and tomato cut up and mixed with a handful of golden raisins and a tsp of capers. It is drizzled with olive oil and white wine vinegar and tossed with chopped, fresh oregano. I love this dish and I used a beautiful eggplant that I had picked earlier. I tried a new pizza place called Lost Pizza. I ordered one called Kujo with thin crust to go. A bit expensive but I can eat twice off of that medium.

A 3-pint stew. Pints of venison, carrots, and potatoes. Yes, carrots and potatoes could have been fresh but wife short on sleep and had to be back to work at 7:00.

For the folks that have cooked the Gochujang Chicken...

What veg do you serve with the Gochujang Chicken?
I served the Gochujang Chicken over spaghetti squash with rice and some unmemorable veg. The Gochujang sauce over the spaghetti squash was really good! My favorite spaghetti squash use so far! I'm having a beast of a time figuring out a second or third veg to serve alongside though. Any ideas?
A friend and I will be adding this combo to our meal prep routine as a freezer meal. So freezer-friendly veg are preferred, but not necessary.

I have chocolate banana avocado bread in the oven right now. The half of an avocado replaces butter or oil. Venison stew. Pint of canned venison and quart of vegetable soup mix. Old Drey quart from the 1930s failed to seal from yesterday's canning project so we were able to quickly enjoy it.

I picked a beautiful eggplant and really wanted some fried eggplant. I hate the smells of frying in the house so I dug out the cast iron griddle and put it on the grill. Hubby wanted fried green tomatoes so we did some of those too. Also cooked some shrimp and potatoes. It was a good meal and hubby requested fried green tomatoes for dinner again tomorrow.
Here is the finished product. A couple of the shrimp are really dark because he wanted to try them in the oil.
