Tonight was turkey pot pie from left over turkey. I have never made this before and it turned out really well. I put some sliced turkey in the freezer for future hot turkey sandwiches and I have enough filling left over from today to make another pot pie for the freezer tomorrow but other than that I am done with turkey left overs and ready to get back to regular cooking. 20191201_172012 by Brownrexx, on Flickr

There is exactly one big hunk of turkey breast left in the fridge. If the kids don't eat it sooner, I will probably shred it, mix it with some jarred salsa verde, get out some cheese, and use my low-carb tortillas to make some enchiladas. We also have some leftover veggies. I will probably heat those up to go along with dinner. Why should I prepare more veggies to go with dinner when those are just sitting there waiting to be eaten, right? The kids had a break from Thanksgiving leftovers yesterday, so I have no more pity on them and their "Ewwww, leftovers!" complaints.

Laura, I tried to fool my husband with calling left overs "repurposed" and "come agains" but he didn't believe me for some reason. Darn men.

I am done with leftovers. Yesterday I made my vegetable beef soup recipe using chicken and we really liked it. It was good to be eating multiple vegetables again instead of all of the carbs. They taste good at first but I get sick of them real fast.

Brown a pound of burger, onion, can of cream of anything soup, canned peas, diced up tomato, pint of home canned celery, big hands full of chow main noodles.. This weekend will be a big counter top roaster full of BBQ chicken legs that were on sale and rice..

Beef vegetable barley soup and toasted polish sourdough rye bread with jam. Made the bread yesterday, and was disappointed it was rather bland fresh, but much better toasted today.

Today I had a couple people over for Mexican food. The black beans for the chilaquiles I cooked yesterday, and had a small bowl last night (I couldn't wait!). One of the friends is vegetarian, but eats dairy, so that's what I stuck to. The black beans for the chilaquiles were cooked with some epazote, onion, garlic, and chipotles, then blended smooth. Since there were only 3 of us, I simply filled the bowls with some chips, instead of a casserole, added the thinned black bean purée, and quickly topped them with some queso añejo, crema, and a little more chipotles and epazote leaves - takes about 4-5 minutes to get them slightly softened, but still crunchy, though the last bites are totally softened, by the time we got to them. The recipe was supposed to have some diced avocado as some of the garnish, but none of mine were even close to ripe. No big loss. Finished black bean chilaquiles. by pepperhead212, on Flickr We took a long break after pigging out on those, and I ran a load in the DW. Then we had some tacos, made with some creminis, and some greens I had just harvested today, and cooked those in a pasilla sauce. This was served in corn tortillas, with some fresh white onion, crumbled up queso añejo, and some fresh lettuce leaves. We totally finished those! Your tacos look good! I just made an old stand by of tuna noodle casserole again. Will be making a cabbage, sausage and noodle dish probably tomorrow.

Ham tonight, with macaroni and cheese and broccoli for the kids and cauliflower and cheese with a salad for me.
The ham will provide plenty of leftovers for my lunches this week and for the kids to snack on, too.

Pork tenderloin using a Michael Symon wet rub and grilled. The rub is originally for chicken but pork was in the freezer.

mgulfcoastguy, tonight I heated up some leftover pork loin roast from last night and I finally made the No Sugar Sweet Potato Casserole that you posted at Thanksgiving. It was SO good. We both really liked it and I will make that one again. We have never liked that casserole with the brown sugar and marshmallows but this one was a winner.

Spent the day making Lasagna. 4 pans full. Froze 2 and gave 2 away. I had left over meat so made a huge meatloaf for dinner. Needless to say I am sick of my kitchen! OH and a banana cream pie with a cookie crust!

No Sugar Sweet Potato Casserole My husband doesn't like sweet potatoes but I love them. I bake mine in the oven with a bit of butter and oink out!! YUM

Put pork roast in the oven. Turned out a little dry, but still quite good. Mashed taters and jello along with it.

On my own for supper so time for special soup with some things that wife doesn't like. Celeriac, garlic, onion, potatoes, and rutabaga. Diced ham added flavor. Not really a soup but boiled vegetables. Made enough for supper tomorrow, too.

Fresh, caught-through-the-ice walleye and perch fillets, air fryer french fried potatoes, green/wax bean mix, tossed salad. Yes, I ended up with another kitchen gadget during deep mark down sales. My air fryer is made by the Instant Pot people, and unlike the my neglected Instant Pot, I have used it three or four times already (mostly for quick roasting vegetables) and Like It! Because it does speed up cooking time spent in the kitchen for me.

I used tolove fresh perch fillets when I lived in South Dakota. I do like fish a lot.
Tonight it was chicken thighs and quickie dressing with cranberry sauce - the canned sort <smile>. Enough for another meal left over. Torrow, Hopping John for goodluck and to use the ham bone.
