Laura_in_FL, a bit better but nothing to write home about. I have no idea where I even came in contact with this stuff. Came on instantly and is just lingering. I am getting better slowly but man stay safe out there. This stuff is no joke.

Beef stew in the Instant Pot tonight with sautéed baby brussels sprouts. I am getting comfortable with the IP. This meat was super tender and it tasted much better than crock pot beef stew that I have made in the past. 20200205_174432 (2) by Brownrexx, on Flickr

Tried something today, just now and glad I tested it before I REALLY did it, LOL. I love brussel sprouts, and am going to make some steak fingers, so...decided to try a light breading on three little BS's and fry them off. Got them nicely floured up, and into the hot lard, where they sizzled nicely, not too wetly, and browned a bit.
I ate them and they weren't mmmm, bad or nasty, tender enough but boring tasting. Maybe a higher spiced dredge would improve them a lot. May try that some times and see.
Sometimes things done weird can be good, sometimes not, and sometimes okay. Have to try at times.

Today I made another IP dish - Mushroom Beef Barley soup. The soup was started in the IP, in sauté mode, cooking a mirepoix in some ghee, then added some chopped up rosemary and sage, some chopped celery leaves, some soaked and minced boletus mushrooms plus the soaking water, 2 qts of water, and 1 c barley. I salted it with some soy sauce, then covered, and pressure cooked for 20 min. While cooking, I washed, sliced, and cooked 10 oz cremini in a wok, adding a lb of ground beef and browning this well. I added this to the soup, when that was done, deglazing the wok with some of the soup, then added 1/2 c red lentils to the soup, to thicken it, and pressure cooked 8 min., letting the pressure release naturally. This finished the cooking of the barley, and thickened it just right. I served it with a little grated reggiano. That looks really good pepperhead212, I also made soup today but on the stovetop. I made chicken rice soup with Basmati rice and I just tasted if for lunch. Yummy, I really like chicken soups.

I didn't feel like dinner at a restaurant since we are leaving for vacation in less than 2 weeks and we are going to our cabin for the weekend so tonight I made a special meal of chicken roulades which is flattened boneless, skinless chicken breast rolled up with a filling of my spinach from the freezer, sauteed fresh mushrooms and a little shredded Monterey Jack cheese. Coleslaw and Ore Ida french fries on the side. We never eat oven french fries or Tater Tots so I usually buy them once a year as a treat. I bought dessert at a local in-store bakery. They make a chocolate mousse pie with a crushed chocolate cookie crust. Yummy. We will eat that later. 20200213_173933 (2) by Brownrexx, on Flickr

I discovered a quart of frozen turkey noodle vegetable soup from a batch made back in December. Forgot how good it tasted! Quick and easy supper fare, with toasted garlic bread.

There was a knock on the door, our 3 doorbells went into a fury of barks, snarls and growls, and there he was, my Bro holding a bowl of homemade chicken noodle soup, homemade biscuits AND homemade banana bread!! My little heart was filling with joy and happiness! I was picturing him with wings and a halo surrounded by an ethereal glow!! But being the man he is, he opened his mouth. He looked me over, said "You look like shit! I am going home and gargling with lysol." Explain to me again why I love that man? <3 Oh yeah!! banana bread

I made a batch of ratatouille based lentils in the IP, with the chicken trimmed from the boneless skinless thighs, that I froze 5 lbs of, the other day. I browned the chicken some on high sauté mode, adding some re-hydrated eggplant, and cooked until the EP was starting to brown some.then removed them. Then, on regular sauté, I added a large diced onion, and cooked that until browning a little, then added a large, diced red bell pepper, and cooked that a few minutes, added 4 large minced cloves of garlic, and cooked 1 min. Then I added one 28 oz can of diced tomatoes, 3 c of water, about a half tb of Serbian oregano (in place of the usual thyme), and a generous amount of chopped basil - I had a large handful of leaves, and used half now, half at the end. I salted the liquid with a generous amount of fish sauce - a favorite of mine, in these dishes. Then I added 1 c of rinsed puy lentils, and 1/4 c red quinoa, and about a tb of crushed Thai pepper flakes, and mixed in. I covered, and cooked 14 min. in the "porridge" mode - something I use when the dish will be fairly thick. It cooled 12 min., and I stirred in the rest of the basil. I will definitely make this again; would probably also be good with Italian sausage, or without meat, and maybe more veggies. Ratatouille lentils, with chicken by pepperhead212, on Flickr

Spike, I hope you are under a doctor's care by now and on medication! Pneumonia is no joke. My husband had a long lasting cold/flu thing last year, finally went into one of the urgent care places, and they shipped him right over to the hospital for a couple of days because his lungs were so bad and whatever he had to start with had turned into pneumonia. He was still driving himself around town, even though he didn't feel well. It was scary to see him in the hospital. Please take care of yourself!

september, Yes I started out at Urgent Care with severe bronchitis which turned into pneumonia but I was able to see my family doctor and he has me on the mend! I will be good as new in a couple more days. I may have to fake a cough or two to keep my brother cooking for me though

So glad that you're getting taken care of, spike - pneumonia can be very dangerous. I at your quip about maybe faking a cough in a few days so your brother will keep cooking for you, though. Glad that you're keeping your spirits up even while you're sick!

I made a Keralan style stir-fry tonight, to use up some mushrooms and bell peppers I had. I served it on a mix of brown rice and millet - something I do a lot, to add some nutrients to rice. The recipe was based on this one: Mushroom Pepper Stir-fryI doubled it, and added more garlic and more hot peppers, as usual! However, just those 5 Thai peppers could have been reduced to 3 - that black pepper is surprisingly hot, in this amount. This is something I turned on my range hood for, even though it's cold out there - the fumes were strong! A friend who was trying this with me thought that it wasn't that hot...until a few bites into it, and it grew on us. Had a pineapple based raita on the side, which helped the cooling! No really dinner but I have beef jerky in the dehydrator right now. I am meeting my folks for lunch tomorrow. Niece number two showed up and we won't see her again until Christmas so if she likes it she can have it and I'll make more. On an interesting side note I found that I had left three trays of dried habaneros in the Excalibur? I wonder if the seeds would be viable from them? Anyhow the house smell like onions and beef right now and it's driving the dog crazy.
Sour Orange Beef Jerky
About 3 pounds or so of lean beef roast, I used Eye of Round 1 cup orange juice, from the grocery store jug is fine 1/2 cup fresh lemon juice, ended up about 3 lemons 2 tablespoons sea salt 4 teaspoons cumin about 3 cups of sliced red onion
Freeze the beef for about 30 to 45 minutes to make it easier to slice Slice the beef 1/4 inch to 1/8 inch thick Make the marinade from all of the ingredients and let marinate an or or 2 Load the dehydrator trays and set the dehydrator for 8 hours and 160F It is ready when the jerky breaks rather than bends
I sneaked a piece from one of the thinner strips and it tastes great. I strained the onions out of the marinade and put them on a separate tray on the bottom. May work out or may not, just hated to throw them in the garbage.

Lazy night for me, just soft fried some left over "baked" potato and heated up some seasoned italian green beans for supper. Nothing fancy, but just what I wanted.

Yumm, grilled eggplant. It's going to be a while before I get to eat that (from my own garden, anyway) but the eggplant seedlings are doing well. Tonight is a simple spaghetti and meat sauce with garlic bread and salad. I can practically make that meal in my sleep since the kids ask for spaghetti so often. Wednesday night I am going to try making a Chinese-style beef and vegetable stir-fry. One of the kids asked for it, to my surprise. Hope it comes out well, since I haven't made any in so long. I was thinking of cooking down some Bok Choy to eat with mine instead of serving it over rice (to cut carbs).

I like eggplant and grilled is really good. I am hoping to make avjar this year with the elephant ar peppers, eggplants and onions grilled outside, maybe will grill some of the tomatoes for it too since the grill will be in use and it would keep the heat and smoke out of the kitchen.
Tonight it was a tired day after grocery shopping, so bacon sandwiches were a life saver. Quick and good.
