Mashed potatoes and gravy, cole slaw, biscuits, original and extra crispy chicken. Wife had to go to the bank and stopped at KFC on way home!

Yesterday I was checking the garden and discovered that I had enough rhubarb to pick so I picked about 12 stalks and cut them up. I added a peeled and a small chopped Red Delicious apple and about 1/4 cup of sugar and a splash of water. I cooked it until the apples were soft and the rhubarb was broken down and then removed from the heat and added a sprinkle of cinnamon and nutmeg.
We ate it warm and it was surprisingly good. I will make this again. It was nice to eat our first meal/desert from the 2020 garden.

Easter dinner tonight: ham, mac & cheese, crescent rolls, cole slaw, potato salad, some other green veggie, and chocolate bundt cake for dessert. Oh, yeah - I almost forgot the deviled eggs for an appetizer.
My oldest son had a (rare) urge to do something in the kitchen. He is working on a homemade ice cream even though we don't have an ice cream maker. I hope it turns out well - I fear that it will be icy. If it does come out well, it will be a great accompaniment to the chocolate cake.

We did not want ham because we really don't like it all that much so our Easter dinner consisted of shrimp scampi, rice pilaf, deviled eggs and a mixture of sauteed fresh mushrooms and 8 asparagus tips which is all that I had from the garden but I wanted to have my fresh asparagus for Easter. Hubby kept saying how much he liked the meal and how fancy it was. I did think that it was pretty good. I always like to make something special for Easter. 20200412_171010 by Brownrexx, on Flickr

The ice cream turned out well, very tasty and creamy, with just a few small ice crystals. It was a very time-consuming method, though. It would have been a lot faster to use the double bag and shake method.
The kids don't know it yet, but I have ordered an ice cream maker. (I ordered it last week, before my son came up with the idea to make ice cream by hand.) So there won't be a need to repeat the experience. I want to try making ice cream with allulose instead of sugar, to hopefully get a keto ice cream with a real ice cream texture. The kids can make the sugary kind for themselves.
To stay on topic, dinner will be pork tenderloin, probably the parsley recipe I used last time since it went over well. And I have PLENTY of fresh parsley out there to use!

I like chopped fresh tomatoes added as well. Nothing better than cold pizza and hot coffee for breakfast!

Made this fish chowder when I came in from the greenhouse this afternoon. Probably will serve as lunch and supper both, I ate close to 4PM. I had to use up some whole milk that was at the due date, bought to make my Easter scalloped potatoes. Normally we use skim milk, so it was not going to be drank. Fish was some frozen perch and sunfish fillets from this winter.

I have not one, but two beef roasts (about 5 lbs total) in the slow cooker. One will be for pot roast tonight. I am going to shred the second one and reheat it with some Mexican spices and make shredded beef enchiladas tomorrow.
I had bought a two pack of roasts at Sam's, intending to cook one and freeze one, but then I thought that I might as well take advantage of my big slow cooker and cook both together, right? I've never tried this before. Hopefully it will work out.

I cooked a big pot of my garden black beans today and we will be having black bean burgers for dinner tonight and then tomorrow night I will make chili with more of the cooked beans.

I was going to support a restaurant and pick up but when I got to the end to pay I got a window saying that they are out of 6" fillets so I need to replace them with an 8" or larger. Too much steak for either of us and 4 more dollars per steak. My husband likes his well and I like mine medium so we're having left over chicken and potato salad from yesterday.

Here's the first recipe I made from that new Milk Street Instant Pot cook book, Fast And Slow. The recipe is Black Beans With Bacon and Tequila. It is absolutely delicious, made with bacon, onions, garlic, canned chipotles, cumin, tequila, some chicken broth, and a little lime juice. The dish is garnished with cilantro, and, even though it is not in the recipe, I ate it with a couple of toasted corn tortillas. With the leftovers I may thin it and make a bowl of chilaquiles - in one of his books Bayless has a similar black beans dish, made into chilaquiles, that is fantastic. Chili and toasted cheese sandwiches. Chili was all from pantry or freezer. Beans which were canned just for chili. Same with spiced tomato juice. Also crushed tomato and last of last fall's onions. Chili powder also my own. Ground venison and diced peppers from the freezer. Super supper!

Being the master chef that I am not, hubby and I dined on a fancy meal of french fries. I had mine with ketchup and he had his with mayo. We did hold our pinkies out while dipping. We aren't total heathens after all.

That looks beautiful pepperhead212, How long did you cook the beans in the IP? Did you soak them first? Your beans look nice, not cracked or with loose skins. I have still not gotten used to cooking beans in the IP. I soaked my black beans overnight and then cooked them in the crockpot for about 6 hours.
