I am making a big crock pot full of Mexican shredded beef, to serve as the centerpiece for make your own tacos/burritos/enchiladas for the family tonight. It smells soooo good in here already!

For my Cinco de Mayo birthday supper we have ordered the Fajita del Portal from our local mexican restaurant; steak, shrimp and chorizo fajitas with all the trimmings, a steak and chicken taco with extra chips and cheese for our granddaughter and a couple of lime margaritas for the adults (don't know exactly who they are in this family). The ladies of the house have baked a chocolate cake with chocolate frosting all from scratch for afters. I will be in hog heaven tonight.

Birthday dinners are the best! Fajitas are my favorite thing to order at our local Mexican restaurant. Tonight at my house we had black bean burgers on toast with a side of my version of succotash which is onions, orange peppers because I was out of red ones, corn and lima beans all sauteed in real butter with fresh parsley mixed in at the end. It's Cinco de Mayo, so I had to make guacamole! I haven't been shopping much lately, but about 10 days ago I went to Aldi's, because they had avocados for 59¢ each, and I had to get some, along with cilantro, and a few other things (I stocked up on corn tortillas, two packs in the freezer now). I thawed some of last season's tomatoes and peppers, and harvested some chives and garlic chives - I like these better than raw onion, since they keep better, and there is less aftertaste, that raw onion results in. Guacamole, on Cinco de Mayo. by pepperhead212, on Flickr And, of course, I had to make something using Tequila! I also had some frozen mole sauce, so I thawed some of that, as well as frozen, cooked turkey, and I made a few tacos with that. And I didn't have any crema, so I used something that I've seen Bayless use in place of sour cream or crema - Greek yogurt. And it was surprisingly good!

Raw onion sometimes overwhelms the other flavors in a guacamole to me, so I'll have to try using chives and garlic chives instead of onion sometime. Thanks for the tip!

Add onion, chives or garlic to any food and that's what you get...the flavor of onion, chives and garlic. Not a fan of any of them in food.

Brought in two pizzas from garage freezer. Later, saw wife open a can of black olive pieces and figured what supper would be. Had to do some work outside and was called in for supper. No pizza! It was tacos instead. Eight bowls of ingredients. Sour cream, onions, avocado, refried beans, shredded cheese, lettuce, tomatoes, ground venison, and olives. Could eat them forever!

Another simple but nearly-unique meal; fish filets, taco salad, and fried potatoes. Nothing there seems unique but it was the potatoes. They were Ozette from last year and still almost solid.

I have been experimenting with cooking beans in my Instant Pot. I was thrilled to discover that I could cook some of my home grown While Alubia beans in 15 minutes with no pre soaking. The beans were perfect and I added the following to make Ranch Style Beans.
2 slices of cooked bacon and chopped onions and garlic cooked in the drippings can of stewed tomatoes tsp of yellow mustard tsp of apple cider vinegar 1/4 c. brown sugar salt and pepper
I was really happy with how easy it was to cook these beans and they made a fabulous side dish to go with fresh asparagus and a ham slice.

I made a recipe that somebody on the barbecue forum told me about. First you heat molasses and salt in a gallon of water until dissolved, then you marinate a Boston Butt in it at least overnight. Nest you coat the butt in mustard. Then sprinkle it with a spicy barbecue rub. Last you coat it in mashed peach preserves. Finally you smoke it over a charcoal fire with peach wood chunks(I had to use pecan wood) until it reaches an internal temperature of 208F. This pic is at 182F so I figure about 2 more hours for a total of 11. I had it going for about an hour when my nephew and his buddy showed up to pick up the old grill.

So how do they taste? I have seen them in the store but have been leery. I really want them to be good but some of those sort of burgers are horrid. spike , DH and I went to Puerto Rico for vacation a few years ago and we stopped at a food wagon on the coast which was highly rated and they had organic black bean burgers. I had always wanted to try those so we ordered then and you're right - they were horrible. The problem was that they were too thick and they tasted like eating a big mushy glob of beans on a bun. Not good. I think that they key is to make the burgers thin and to fry them in a flat pan. They totally fall apart on a grill. Here is the recipe that I use and I make them with my own home grown black beans that I cook in a crock pot and freeze in jars that are the same size as a can of beans. The seasoning and the salsa really makes them taste good. I was out of salsa for this last batch so I had to use catsup and they were not quite as tasty in my opinion. We use the same condiments that we would use on a ground beef burger and we like them. Give them a try sometime but make your own. It's really not hard but it takes a little effort at first to get the feel for how moist to make them. Add extra bread crumbs if they are too wet. Black Bean BurgersUse a potato masher to mash 16 oz of black beans. Add finely chopped onion, 1 small egg, ½- ¾ c. Panko bread crumbs, ¼ c. salsa, ¼ tsp. salt and ⅛ - ¼ tsp. cumin and roll into balls. Refrigerate balls for 1 hour. Flatten into thin patties. Makes 6 patties Fry patties in a small amount of oil until both sides are crisp.

Happy Mothers Day!!! an Oklahoma Joes smoker/bbq/ grill. we tended the fire all day yesterday and I guess it was edible. there wasn't much left, everyone said it was good and I sent the little bit of left overs home with my oldest son.

I threw together an Indian dish today - a sambar, made with some of my frozen okra, and a very large scallion from the garden, sliced up instead of scallions, and browned, along with the okra, in a NS wok. Okra and scallions, about half way through browning. by pepperhead212, on Flickr While that was browning, the toor dal cooked for just 8 min. in the Instant Pot. When the pressure released, I added some leftover brown basmati, along with the sambar masala, turmeric, asafoetida, and curry leaves, as well as the browned okra and scallions, and brought to a simmer for a few minutes. Then I added some chopped cilantro, and some chopped scallion greens, and that was it! I cooked chicken breasts on my grill pan on the stove with sides of left over asparagus soup and coleslaw. I am still playing/experimenting with my Instant Pot so I decided to order the little Bundt pan that fits inside. It arrived yesterday so tonight I made corn bread in the IP. It is a different texture than oven baked corn bread but I thought that it might be interesting and it was. It is super moist and we really liked it. You would not like it mgulfcoastguy, because it has sugar but we really liked it warm with butter after dinner. Someday I may try the chocolate cake recipe.
