I've heard many make Kraut & freeze. I freeze Kraut all the time but I don't eat much of it. I think cabbage is like lettuce with a high water content but I could be wrong.

when I grew cabbage I would just chop it and freeze it the day I picked it.

Can you freeze cabbage like you would say.... collards? Yes, but like frozen collards, its got a fairly short life in the freezer. By 120 days out freezer burn is going to increasingly be noticable.

I just leave the cabbage on the stems in the garden and havest as needed. Learned this lesson last december when temps dropped below 10' here. Now that was cold and early!!!!

pack your cabbage in dry straw in an unheated building with their roots still attached, or so I've been told. I havn't ever tried this because I never had any cabbage left, but will try next year.

I have frozen cabbage. Sometimes when I make stuffed cabbage rolls there is a considerable amount of cabbage left after I've taken the loose outer leaves off. It's already blanched at that point, so I just chop, bag and into the freezer.

How long does it need to be blanched before freezing? Don't you need to chop it before blanching?

This is an old thread but resurrecting it because cabbage is on sale this week...
I've never frozen it before but am going to try it this week... Going to try both freezing raw and blanched as a trial...And going to slice it in ribbons rather than leave in wedges... Should be nice to be able to pull a pack of it from the freezer when wanted for a quick stir fry or something...

I wonder if vacuum sealing before freezing would make a difference.

I imagine it would, but I don't have a Foodsaver... I use ziplock freezer bags and press out as much air out as I can... You would think I would have invested in a Foodsaver by now as I have been freezing stuff for decades...

I have frozen white/green cabbage but I forget how I did it other than I cut it into ribbons like ahntjudy, I just can't remember if I blanched it first. I freeze sweet peppers without blanching every year and they are fine for cooking. They don't stay crispy of course but in stir fry I can't tell the difference. I think that unblanched cabbage would be the same.

You would think I would have invested in a Foodsaver by now as I have been freezing stuff for decades... Someone suggested submersing the filled ziplocks with half of the zip closed in a deep bowl of water to press the rest of the air out and quickly finishing the zip before any water leaks in. l have never tried it, but it sounds like it would work for less air residue. Kind of putsy work though, if you have a lot to do.

We have started dehydrating our cabbage and putting it in quart canning jars, and then using the special sealing caps for our food saver to vacuum seal the jars and putting them in a dark cabinet, but i'm thinking I may try to dehydrate and put in the food saver bags, vacuum seal, and then freeze to see how it works...

september, I read somewhere about submerging the bags in water as well but have never tried that either... It kind of sounds though that then I'd end up with a whole bunch of wet bags to dry off...I don't know about that... I should probably try it before passing judgement though...
