Try Fernleaf. It's a dwarf variety, only 18" in height. apparently grows well in larger containers. Don't crowd though was one recommendation.

If the seeds are brown and dry, I'd go for it w8n. If they are still green, I just don't know. Never tried it.

At what point do you harvest dill? I've never grown it but thought it might be fun to use home grown dill in my homemade dill pickles I've also heard that dill is a good distractor for tomato horn worms...is that true?

Hi.
I don't really have working experience with dill. Only have grown a few stalks for fun.
Mom says Dad's mother would go out to the garden and harvest some green heads to put whole in the dill pickles.
I'm not sure of the companion planting aspects. Anyone?

Here ya go: this is a dill that volunteered - nearly 6 ft tall. These are rampant growers - once you get one or two started - you'll never lack for fresh dill again. Butterflies and caterpillars love them. Last summer I used the lawn-mower to get them out of the garden before they went to seed. Pictured you can see the green seed - it will turn dark and dry; they will keep for years, once dry in a container. You can also snip the fern-like foliage before they go to seed - dill weed can easily be dried in the refrigerator. I cut a pile of it before the plant goes to seed, spread it out on a dinner plate, and leave it in a protected spot, uncovered in the fridg. Turn it occasionally. It will be crispy dry, then you can crumble it and use it like the herbs you buy at the store. I've found all herbs retain their color and flavor much better when cold dried than when dried in a warm dehydrator.

When would dill be planted in hot summer areas? I use fresh dill in pickled okra but don't know if it grows at the same time here.

It volunteers in early spring here. The one pictured above has already burned up - we've had weeks of mid-90's already. I snip and dry for use later. I'm pretty sure it would do well in fall - but by then your okra will probably be done.

I am growing the fernleaf version this year. We'll see if it gets me everything that I need or if I will have to grow multiple varieties next year.

Do you use the leaves or the seeds? I don't know how it will do in Texas summers, but I had some growing in summer last year here in Florida. They were well-watered in a veggie bed, partly shaded by my okra, and they did great. So, if you are after leaves, afternoon shade and regular water might help slow the bolting (or at least keep them from burning up) in hot conditions. Cold-dried leaves should be pretty close to fresh for use in pickling. You might consider planting some dill just after the last frost date and cold-dry its leaves just in case the summer dill doesn't work out. You can also collect the seed from the early planting. Then you will have lots of seed to make succession plantings every couple of weeks beginning in early summer. Hopefully they will do well and get you some fresh leaves when the okra is ready. But you'll have the dried leaves as a backup. The only big problem I had with dill is that tiny green caterpillars mowed the tiny seedlings down. I had to plant extra and handpick them them until they got 6" tall or so. Once they got big enough, they outgrew the damage from both the green and swallowtail caterpillars.

Do you use the leaves or the seeds? I use the seed heads for pickling and hang dry the 'leaves' for cooking and dips. This is why I grow the two types of dill. I pick them off the dill being grown for the heads and put them on the fernleaf dill. I just love swallowtails and will sacrifice dill for them!!

First time in years I haven't had dill volunteer. I even planted some seeds and not one came up. What's up with the universe?

For some reason it is hard to grow dill here. This year I made seed tapes and they germinated MUCH better, but the plants start dying out by the time they are a foot tall...and this is Mammoth dill. Or, if any live into July, the Black Eastern Swallowtail (parsley worms) caterpillars will demolish it. I mean completely eat every little bit. Then they move on to the fennel. Too bad, because dill is one of my very favorite herbs.
One day I hope to grow enough dill to make Gravlax.
