Does anybody have any experience with the different varieties, and which ones are best for food?

Ciao Rich- Depends on who's eating. The giant head varieties are the ones most often used for roasting and eating. The smaller-seeded ones are for the critters. Mammoth Russian and Titan are some of the large-headed varieties I've grown. Keep in mind that squirrels do sometimes climb the stalks to get the seeds, so you may want to "cloak" the head with a breathable material after the petals wither and fall to protect it while the seeds mature. The plants can get as tall as 20 ft or more, so you would do well with sturdy staking for wind protection.

all I want is the ones that can make oil easy and that is the kind that have small black seeds I have 20 pounds of seed for it.... it gets feed to the birds now, I can't plant that many
