My wife and I canned a lot of Peppers this summer and have noticed some jars stayed pretty firm almost crunchy while other jars were pretty mushy. Anyone have an idea as to why? My wife thinks it's due to the time of day the peppers were picked, but I'm not convinced.

Maybe the level of ripeness of the jalapenos?
