g,day all . been busy in the garden just picked all the peperoncini chills . char grilled them on charcoal .marinated them in lemon juice and salt 1hour . with the rest of the left over lemon juice added it to 600ml of olive oil whisked and put on heat until oil reaches 80C (176F) put chills in sterilize jars with capers ,sprig rosemary and garlic( which i char grilled also). add oil .and cap. wow cant wait to try these they smell awesome . also made some jars of sweet chilli sauce from my Hungarian hot wax chilies. i love this stuff its sweet and hot .

no problem about sharing the recipe . hope everybody has a go at this .it will make you drool and keep you making more. i used mild chilli in mine so if you want it hotter use hotter chilli. hear it is
SWEET CHILLI SAUCE 10 red chills 1 onion 5 cloves of garlic 100 ml (7 tbsp) apple cider vinegar 1 tbsp salt 150 grams (3/4 cup) brown sugar 2 cups (500 ml) water
prep and cook time 40 mins
step 1. rinse the chills and remove the stem. peel the onion and garlic and coarsely chop
step 2. put the chills ,onion and garlic in a food processor and finely chop
step 3. put the finely chopped vegetables in a pan together with the salt, apple cider vinegar ,sugar and the water and bring to a boil then simmer stirring occasionally for about 30 minutes until sauce thickens
step 4. pour the sauce into sterilize bottles close tightly and allow to cool
use after 2 to 3 weeks . once opened put bottle in fridge . also add the chilli seeds from the cut up chills in to step 3
so that's it . i would love to hear feedback from you guys or add some pics on this post to show how your sauce turned out . good luck
