Beer can chicken: Run your fingers around between the ckicken and meat. Front and back. Inna bowl mix up a good handful of chopped fesh parsley with a two teaspoon of salt and one teaspoon of pepper and a tablespoon of crushed garlic. An additional tablespoon of chopped rosemary is optional. get some a that goodness in-twixt of the hide and meat. rub any left over into interior cavity.
Open 12 oz beer take a good slug. Insert open beer in backside of chicken place all upright inna 8X11 baking pan. Your chicken should look to be standing up in pan. Tuck up wings.
Roast in slow oven (300°) for 1 1/2 hour. Turn oven up (375-400°)and let brown 15-30 minutes. Check with instant read thermometer once nicely brown.
The beer helps cook that bird really. Works equally nicely in Webber style BBQ under cover.

Dry rub for chicken?
Paprika, salt, pepper, and Italian herbs. You can add garlic or onion powder too. Really, it's not that hard, just start with paprika and add in what-have-you.
If you can find it, get a jar of potlacth seasoning and use just that. Awesome stuff.

Substitute Old Bay Seasoning for the salt (or a good Cajun rub). For oven baking a whole bird, I often take a few tiny lemons and roll them firmly on the counter top, then stab them several times with a fork and put them in the cavity. As the bird heats up, the lemon juice steams up inside the bird, keeping it moist, and adds flavor.
