I had to start these in early Feb, and re-plant in larger pots as time went on, and it finally started flowering about 2 weeks ago. Boy, did this thing attract bees! I counted the number of clusters of flowers on it, and there are 28 (I may have missed some, or counted some twice! LOL), as well as some with no open buds, but it just keeps growing! It is now over 78", including the pot. Here are a few photos I took today. First eggplants: Largest cluster of flowers (though you really can't see them all!): Distant shot, showing the size of this thing...so far: I will definitely be making a Thai curry soon!

I don't really know if they would eventually turn another color, but they are green when harvested. They are about 3/8-1/2" when harvested, and about 3/4-1 c is added to a Thai curry that has about 3 c coconut milk in. It adds a bitterness to all those layers of flavor in a Thai curry, and another name for it is bitter eggplant. And here we always try making sure we pick our eggplants early, to avoid bitterness! Go figure...

Those are really different from any other egglant I've seen. The white flower clusters are pretty.

I forgot how good those things are! I made my first harvest today, getting about 1/3 c of them, so I made a small batch of Thai curry, also with a bunch of the other eggplants I am getting large numbers of. I added a hint of Indian to it by adding a cup of moong dal to the mix, to thicken it and add protein, but the rest was all Thai: green curry paste, fish sauce, palm sugar, tamarind, lime leaves, coconut milk, some cut up green superthai peppers, and some Thai basil at the end. The burst of flavor in those pea eggplants is delicious!

I had a funny thing happen today, regarding that eggplant. One of my neighbors asked me if that huge plant was one of my peppers (I guess there are small, round peppers, though usually smaller). You should have seen the look on her face when I told her that it was an eggplant! LOL That thing is getting to over 7 feet tall, and has so many clusters of flowers and eggplants on it that I am going to have to make a LOT of Thai curry to use them all up! Not that I mind...
