I got this Burpee Arisocrat Canner/Cooker at a yard sale at a great price 15 bucks. This thing is huge, like 16 inches tall! It has 2 racks in it and it will hold 14 quart jars... I'd like to know if this is doable, or should it be just 7 quarts on the bottom and use pint jars on the top?? Take pity on me as I have NEVER pressure canned anything before so I'm needin to be schooled... lol! I will have a bunch more questions on Pressure canning, but I thought I would start here?

I think, if I were you, I'd search for a manual for the canner. Too, perhaps your extension service could help. You probably could fill it with quarts, though.

I think you'd be better off using an old stove or gas burner. No smooth/glass top stove for this heavy thing. That would be a recipe for disaster, I think. Enjoy!

Yes, that is a huge canner - I don't think you want to put that much weight on a smooth top.

I have a National #14 which like yours can handle 14 quarts. When canning a bunch it is a real time saver, but will say that I have a dirty kitchen outside with a propane stove where the big bad boy does it's thing. I would hate to try a glass top like in the house. Yours really looks like a nice unit with a lot less use then mine, but mine is from the early 40s. After looking and reading online about your canner, it was mentioned that Burpee discontinued this line for safety issues, so you might want to read up on it. As well they went out of business a long time ago, so parts are scarce.

Thanks meandtk, Laura_in_FL, materman, I did look this up and materman is right, they did discontinue this particular model, but I think I will at least give it a try,We are gonna use a hotplate outside to check it out that way if it does go boom, it will just tear up the hotplate and maybe bother the neighbors a lil...

I would advise taking it to you county extension center and have them test the pressure gauge. It is usually free and adds one more element of safety. Just make sure you have it latched properly and maybe not use it for things that take a higher pressure. Good luck on a nice find.

meandtk, Laura_in_FL, materman, Well I took it over to our county extension center in town today and they tested the pressure gauge and told me it was off by only 1 degree and that was good for such an old canner. They said as long as I made the adjustment it should work just fine... instead of the 11psi just let it go to 12psi. They took a look at the seal and said it looked good to them, then a very nice lady in that office said that she remembered the Burpee canner as her mother still uses hers today ! She seems to remember that her mother told her it was one from the 40's and mine looked really good to her mothers...

That is a huge contraption thats for sure! One of those oldies but goodie things.... I love Antique stuff like that. I hope it works for you! Let us know what the Ext. Office says about it. I am sure almost positive they will say not to use it, I hope not. Hopefully you can still get parts for it.

meandtk, Laura_in_FL, materman, w8in4dave , well we chickened out on that big canner, so we invested in a brand new Presto 16 qt. canner... , it has the 3 piece weighted pressure regulator on it... no gauge, so it's going to be a learning experience for me, but wifey said she just didn't want to take any chances with that big'un exploding on me! I just hope I didn't jinx my garden... LOL!

Congratulations on the new canner. I hope you enjoy it. I think you would have been more likely to "jinx" your garden by buying a huge canner, though.

Many of the old Nationals can be "updated" with All American parts such as the gauge and changing out the petcock for a weight and vent tube.
