Some here dehydrate their tomatoes for storage... do you have a particular variety that you grow just for dehydrating??

No particular variety I like to dehydrate and freeze. Then before I use it I make it a powder and add to sauces like a spaghetti sauce or some thing to help up the taste My friend puts it in her Mayo on sandwiches she takes to work so the tomato slices dont make her bread all soggy... I like that idea. Just the whole thought makes me happy! Sprinkle it on anything!

I dry small tomatoes, whatever the variety available. Last year I had a bunch of very large cherry tomatoes, and an incredible number of Nichols Heirlooms, which is like a Thai egg tomato, and I dried a bunch of those. I still have some of those dried tomatoes!
I dry them to a sort of leather feel - usually 1 lb. dehydrates to 1 oz. One of my favorite things to do with them is to use in Mexican dishes, in which I toast them in a dry skillet like I do dried chiles - pressing them briefly against the hot pan, then rehydrate separately from the chiles, using these in place of broiled tomatoes.

Great idea pepperhead !! I also like to smoke tomatoes then dehydrate them then powder them brings a smoky taste to your plate

I made vegetable broth but did not dehydrate Tomatoes! pfftt! Kinda busy this week but will try to remember!!!
