Do all of the different colored bell peppers have that bell pepper taste, or do you think each color whether it's red, green, yellow, orange, white, purple and so on have a different flavor?

Good question. To me, most green bells have similar taste, but as they ripen, or change color, the tastes change. Perhaps still "bellike" but different. Maybe sweeter as they ripen. My growing season is just short enough we get few ripe bells and my memory is as short as the season. I seem to be switching to the longer peppers because they are sweeter.

Some of the colored bells I have grown have very little of the "bell pepper" flavor when dead ripe. The tastier ones are more fruity - some of the best reds taste a lot like an apple.
The trick is getting them dead ripe (no green at all) before picking. Some peppers can ripen somewhat off the plant as long as they are not refrigerated, but they tend to soften fast at room temperature. And, IMO, for best flavor they need to get fully ripe on the plant. That's probably tough in northern climes, but easy in the Deep South. The main problem I have is getting a good look at the pepper before picking. Sometimes I think it's dead ripe and pick it only to find that it was still partly green on the side facing into the plant.
