What i'm wondering is if you were pulling tomatoes that are just getting some color to them, would it make the plant produce more fruit because the plant would be thinking it wasn't producing enough seed? I mean would it be like dead heading flowering plants?

I always pick large tomatoes while not quite ripe, but only because I want to do it less often. Cherries, OTOH, can get dead ripe very soon - even after I picked everything with just a hint of ripe color, the next day they can have some that look dead ripe! Yet it doesn't seem to slow them down!

Tomatoes here are picked just before dead ripe and there seems to be no difference in flavor when they do get dead ripe. That way we can be sure not to lose very many. I do not think tomatoes are dead headable plants. You get what you get unless you pluck off the flowers thereby reducing production. You may get larger fruits but fewer of them. A lot like trimming and desuckering.
