For the Christmas Eve family gathering I made a smoked queso called Chorizo and Shrimp Fundido. I left the book at my folks house but I'll try to remember the ingredients in the order that they are used: olive oil, 1/4 cup 1 cup Spanish dried type chorizo diced, can use Mexican chorizo if you precook it first 1 pound of shrimp tails, peeled, deveined, and chopped 3 green onions chopped 2 Roma tomatos diced 1 cayenne pepper seeded and minced 1/4 cup all purpose flour 2 cups milk 1 lb grated pepper jack cheese The "after picture" only took 20 minutes from the first taste.

A rerun of this is on the grill now. I goofed up and used a quart of milk so I have to cook it down longer.

About to make this again to carry to a crawfish boil tomorrow. Using the Mexican chorizo for the first time, Rouses'slet me down.
