Does anyone duplicate v 8 juice? One that be canned or frozen, and still taste like the stuff in stores?

Here is one similar to one I picked up on the Harvest forum at GW. I add chopped carrots as well as jalapeños and use citric acid instead of lemon juice. I use only pint jars and can usually 36-48 jars to use in soups throughout the year, as well as giving it to friends to add to their beer. The jalapeño gives it an extra kick. I first tried to make V-8 by looking at the ingredients on the label. After a number of batches, learned that the one thing to leave out was beets. Other than salt and pepper, I've made up to V-12 and think that the two main ingredients are tomatoes and carrots. Not just the carrot but some of the tops as well. Peppers need to be ripe and sweet and not too many. In the end, mostly depends upon what is available of the basic parts.
My way is to liquefy everything in a blender. Simmer for half-hour or so to further make it a liquid. Then press it through a chinois sieve to retain maximum material.

Your color will be off without any beets. Just remember its about 10 to one. Ten parts tomato to one part of everything else. A possible sample list could be; Tomato, onion, celery, garlic, beet, bell pepper, parsley, carrot, Cook all at simmer, put all through china-cap. When you are ready to can-freeze give the juice a good shot of lemon juice & salt. If you try to go low on salt and lemon juice you will need to pressure can. And your V-8 will taste like meh

I never made one that hubby liked as well as the commercial one. He loves that stuff.

Figured that there should be a copycat recipe of the real V8 available and there is. Takes more like 16 ingredients. The stuff makes one heck of a good base for stew in deer camp. Or beef stew at home.
