hairymooseknuckles, that last one could use up some of the habaneros that will be harvested next month. I suppose lime juice could be substituted in many of the recipes for vinegar or drastically reduced if the recipe is pressure canned. Thanks for the link...

I am one who LOVES vinegar based sauces and I definitely recommend Pepperfool's recipes. I've made several of them over the years and I really like them.

I think that the sweet flavor of a habanero would be more suitable than jalapeños, for a pepper candy.

The Cowboy Candy that I made was sweet pickled jalapeño slices. I used a very hot habanero instead of the red pepper flakes that are added. They will light you up pretty good.

Dave, I love ya man but there is no such thing as a sweet flavor of a habanero pepper in my world. I have never developed a taste for hot pepper like you obviously have. I enjoy you posts about the different peppers as you obviously love them. Keep up the good work.
