At september 's request I am posting my lasagna recipe. This is a recipe that I have used since Home Ec class in High School. It is a little different that current recipes in that I do not mix an egg with the ricotta and it uses Swiss cheese instead of mozzarella. I always get compliments on this dish but you can always use mozzarella cheese if you prefer. This recipe is easy because it has enough water from the tomatoes to cook the noodles in the oven. No need to preboil them. Just use the uncooked lasagna noodles and make sure that all edges are covered with sauce before baking. I use either fresh tomatoes or my own tomatoes from the freezer. For zucchini lasagna I use the same recipe but I slice zucchini lengthwise and then grill them lightly on my outdoor grill to remove excess water and add some grilled flavor. I use the zucchini slices in place of the noodles. You need to grill lots of zucchini noodles because they shrink quite a bit. 20190826_170201 by Brownrexx, on Flickr Lasagna1 chopped onion 2 cloves garlic, smashed and chopped 1 lb ground beef ½ tsp. onion salt ½ tsp. celery salt ¼ tsp. pepper 1 tsp. Italian seasoning 28 oz can of whole tomatoes 15 oz can whole tomatoes 18 oz. tomato paste Lasagna noodles 1 lb part skim ricotta cheese 12 oz. Swiss cheese slices, cut into strips (can use mozzarella if desired) In a large skillet, cook onions, garlic and ground beef until pink color disappears from beef. Drain off any fat. Add seasonings, tomatoes and tomato paste. Simmer, covered, for 20 – 30 minutes. Place a layer of sauce in bottom of baking dish and then layer 3 uncooked noodles across the bottom. Spread ricotta on noodles, then Swiss cheese which is cut into strips and sprinkle with parmesan cheese. Ladle and spread sauce on each layer and repeat. Make sure noodles are covered with sauce so that they can cook in the oven. Makes 4 layers. Bake at 350 degrees for 45 minutes. Cool for 10 minutes before cutting.

Thank you for posting this! Swiss is my favorite sandwich cheese, have not had it on lasagna, but will try it when I have enough zucchini for the lasagna strips.
