And if you have dehydrated or purchased dehydrated potatoes, what did you make with them?
Potatoes are on sale. It's been a bad year for excessive rain and the last two bags we've bought have rotted quickly in our condo.
So this morning, I bought a couple of bags of nice, small to medium sized red skinned potatoes. I'm peeling them and slicing them. Going to dehydrate these, then I think I will cube, blanch and freeze some and maybe a few french fries as well.
I can use the dehydrated slices in Scalloped Potatoes and to rehydrate, cook and mash them. Just trying to think what other end uses I might have an option for?

I received a pack of dehydrated shredded potatoes for home fries as a gift. I had my doubts but eventually I used them and they cooked up perfectly after re hydrating them with hot water.

Yes, I've used them for large gatherings like pot lucks. I used them for Cheesie Scalloped Potatoes once. They turn out so well, some people were tricked into thinking I had made them from scratch. I've just never used them for anything else. I guess I'm going to have to experiment and see what I can do with them.

bluelacedredhead, I like home fries occasionally and I just saute some onions in oil and then add the potatoes. I like to get the potatoes really brown and crispy on the outside so I do not stir or flip them until they brown. Every once in a while I will make these for dinner with pork chops or ham.

We have made dehydrated potatoes several times. We used Yukon Gold type, sliced thin with the food processor, dried to almost potato chip crispness. My favorite use for them is in "just add water" jarred meals.

so, do you think its necessary to peel them before dehydrating them?

I think the peels would just dry up and fall off, with my luck, in the dish as it's cooking.
I didn't peel potatoes for 30 years but these days I have difficulty chewing potato peels so I peel them.

Peel before dehydrating...... Not the Yukon Gold... At least we didn't.. Seems to not be a problem. Other varieties.... No experience yet.
We do occasionally get a package (8 pack) of dehydrated hash brown shredded potatoes. The packages being pint size whipping cream paper cartons. They are very handy for making up "just add water" jarred recipes.
