No Sugar Sweet Potato Casserole 2 pounds sweet potatoes 4 tablespoons butter melted 1 cup unsweetened applesauce 1 tablespoon pumpkin pie seasoning 1 teaspoon of salt 1 1/2 cups chopped pecans additional salt and cinnamon for topping(optional)
Preheat oven to 375F Bake or microwave sweet potatoes until done, let cool, and peel. Add apple sauce and peeled sweet potatoes to a food processor and mix. Add melted butter, spice seasoning, and salt and reblend. Transfer to a 9 inch baking dish and sprinkle the tip with the pecans and optional toppings. Spritz the pecans with olive oil for a crunchier topping. Bake 25 to 30 minutes.
I am of the school of using an old fashioned potato masher personally.

mgulfcoastguy, as you may remember I grew sweet potatoes for the first time this year and I have some really big ones. This recipe sounds really good to me and I printed it out to try. Hubby and I both hate the idea of adding brown sugar and marshmallows to sweet potatoes so this recipe sounds good to me. Yesterday at my cooking class the instructor layered sweet potato slices with apples and even though she sprinkled with brown sugar, it was really good. Sweet potatoes and apples seem to be a good tasting combination.

This turned out to be a hit once people tried it. I also made chocolate avocado banana bread and blueberry banana bread.

I don't think that it is firm enough for pie. My sweet potato pie has eggs and some milk to make it hold together better.

I agree with brownrexx,. But you could always try it adding the typical amount of eggs and cream as a pie. If it doesn't work out you just eat the evidence. The only expensive ingredients are the pecans and the pumpkin pie spice which is ginger, nutmeg, and cinnamon I believe. BTW, I decided that the amount of pecans was in error. It is the amount written in the recipe, I double checked, but this year I put just a half cup per recipe. That might be a bit sparse so try anywhere from a half cup to a cup until it seems right to you.

brownrexx, Yes but the last time that I made it, 1 1/2 cups in a 9x9 casserole pan was way to much. Plus mom has diverticulitis and nuts are a no no. If they are sparse she can just rake them off. Walnuts or sliced almonds ought to work if pecans can't be found.

I really like that it has no added sugar. For me pumpkin pie filling is always too sweet.
