I am going to season up a 4.5 pound pork loin tonight and grill it tomorrow. First I will coat it in honey then rub and let it go on a wire rack in the fridge over night. Then on the grill maybe with some pecan chips. Toward the end I will baste it with Cleveland style bbq sauce. Rub and sauce from btleighs.com . Will it is in the fridge I will make a loaf of chocolate avocado banana bread(recipe below).

Today I am getting the grocery list ready and doing the (hopefully!) final pre-Christmas food shopping. There should not be too much left to get, since I already have most of the staples, and the turkey has already been thawing for a couple of days. Tomorrow is baking day with the boys - we will make cookies and other desserts for Christmas Eve and Christmas. I have a pork temderloin in the fridge for later in the week when we want a break from turkey leftovers. Christmas presents are all bought, and I have just a few more things to wrap. So things are in good shape here.

We received a new dishwasher from Santa and had it installed last week.... All, works well.... Just in time for Christmas....
They sent me the invoice... Does that mean that I'm Santa ?
Oh, Oh, Oh...

Cookies and other Christmas desserts are all done. Still have those few presents to wrap, but overall we're in good shape for Santa's arrival.

Well, I guess I won't be having Chocolate Pie with Toasted Meringue for Christmas Eve desert tonight! Re-read the recipe and it says prep time 24 hours! Dang, missed the part about refrigerate overnight. Oh well, there is always New Years. Maybe for the best because I still have last minute house cleaning and arranging to do this morning. Guess we'll just have the pumpkin pie someone gave us.

Wow, never read a chocolate pie that needed a 24 hour rest time! Why does it need to rest? You've really got my curiosity going now

@imp , the recipe is here: www.flourishingfoodie.com/blog/chocolate-pie-with-toasted-meringueI can't stand looking at the pie pictures that come with it, they make me weep with want! You bake the pie crust, and make the chocolate mousse filling the first day, then chill the pie overnight before you make the meringue topping the next day, --- and I missed the part about using a kitchen torch, which I don't have either. Sigh ...

Well almost all of the banana bread and pork loin are eaten and all the gifts are exchanged. The two grandnephews shrieked and played for hours.

Yesterday Sweetie made our traditional Christmas eve dinner. Meat pie, boiled potatoes, gravy. This year was ground pork and carrots.
Today, ham in the counter top roaster oven, Yukon Gold potatoes, garden peas.
Sweetie also made butter tarts yesterday. That and tea for breakfast this morning.. Remember.. On Christmas there are no calories in butter tarts... It's a Canadian thing.. eh...

Have you ever used the counter top roaster for baking? The packaging claims it can be used for it, but....

If you really want that pie, september, kitchen torches are pretty cheap on Amazon - $12-$30 seems to be the range. But if you don't want to buy another kitchen gadget, I don't see why you couldn't get the pie well-chilled and then put it under the broiler to brown the meringue. I think it would only take a minute under the broiler: www.craftybaking.com/howto/meringue-brown-or-browning-techniquesMy mom always browned the meringue for her lemon meringue pies in the oven - not under the broiler. The lemon filling underneath was still cool when she took the pie out of the oven. I know that the chocolate mousse is going to melt easier than a lemon curd filling, which is why I suggested the broiler method. If you spread the meringue all the way out to the edge - totally covering the mousse - it should insulate the mousse while the meringue browns. For an extra measure of safety, you could stick the pie in the freezer for 30 minutes or so until the mousse is very firm (but not completely frozen, since that might alter the mousse's texture) before quickly spreading the meringue and browning it.

Laura_in_FL , I thought about the broiler and then worried about the mousse melting too. I wonder if you put the pie inside a baking pan filled with cold water and ice`cubes, if that would keep it cool while the meringue browned. Not sure my hubs would trust me with a torch in the kitchen! (or trust myself, for that matter!) I like your link for several methods of browning, very helpful, thanks!

Hope you find a method that works for you. That pie looks scrumptious.
