I finally got around to trying something I've been thinking of doing - making tomato paste using rehydrated dried tomatoes! It worked great, using 2 year old tomatoes. I just soaked them in hot water, and used 5 oz, which is 5 lbs worth of tomatoes. I blended it up, in 2 batches in the Vitamix, which was just over 2 lbs. I cooked them down for 1 1/2 hrs, to 15.5 oz, scraping it frequently. Love your use of the dehydrated tomatoes. So are you going to canl the tomato paste? Or keep it in the fridge? If it's in the fridge, how long can you keep it before it goes bad?

solargeek I froze the paste, in 1/4 c (was 2.3 oz each) containers - got 6 of them, plus about 3 tb. I'll probably do this again; if I get a lot of dried tomatoes this year, I'll make last years into paste.
