3 teaspoons of baking powder 3/4 cup butternut puree(canned pumpkin works fine) 2/3 cups flour 1/4 tsp salt 1 tsp cinnamon 6 T unsalted butter 1/2 cup sugar 1/4 cup brown sugar 1 egg 1 cup oatmeal 1/4 cup raisens 1/2 cup chopped nuts
combine wet ingredients in one bowl and dry in another then combine. Cover and chill in the fridge. Pre heat the oven until 350F. Bake tsp sized balls for 12 to 15 minutes. I have substituted agave for the sugars but it makes for a flat cookie

Looks good, mgulfcoastguy! I'm going to make some butternut bread, using that butternut flour I made with dehydrated squash.

The first batch of the year was cooked Monday and is gone by now. The substitutions this time were agave for the white sugar, demedera for the brown sugar, and used slivered almonds for the nuts. Next time I think I will substitute dried cranberries for the raisins.

I can not imagine the taste of a squash cookie. A winter squash and a pumpkin are basically the same thing. You have had pumpkin pie I guess? When I don't have any winter squash available I buy canned pumpkin which is often butternut squash despite the lying can. These cookies are rather moist and on the softer side versus crisp ones link ginger snaps. Only one way to find out if you would like it.

bestofour, butternut squash is interchangeable with pumpkin. I love pumpkin cookies, cakes and pies. Many people make butternut squash pie and it's good. I like using butternut squash because the Squash Vine Borers do not bother those plants so I can grow them. I have never been successful growing pumpkins.

Pumpkin pie is my favorite pie and one time at a luncheon the main course was pumpkin soup. I thought oh boy but struggled to get any of it swallowed. Surprised that I didn’t like it. The hostess knew I loved pumpkin and offered me the recipe. I declined nicely and she admitted it wasn’t pumpkin but was butternut squash instead. She said they taste the same. That soup didn’t taste like pumpkin to me. I’ve been told the same about sweet potato pie and butterscotch pie. Maybe it’s a texture thing but the squash tastes too sweet and the butterscotch tastes like butterscotch.
I’d try a cookie though cuz I love cookies.
