Step 3 on those instructions is all you need to know about their juice. The tomatoes are packed in. They are whole but not like you see on the vine. Without their skins, they will easily pack. And since you will have them by themselves in a pot, they will be leaking juice. Jars can be topped off with that. Water is never added.

it will work. do yourself a favor if you haven't already... go (or order) someplace that has canning supplies and get the Ball Blue Book. it has step by step instructions and many recipes to use your garden produce up and enjoy it all winter and Spring long. follow the instructions don't skip steps don't substitute one thing for another until you have some experience with canning. Unless there is something you just don't like the flavor of such as mace or cloves or some such spice or green peppers (use colored bell ones) if you don't like the main ingredient you won't be inspired to eat it after all that work either. they are about 10.00 at the ACE Hardware store.
