I tried out a new way to fry and freeze okra and we are very happy with it. I wash and then cut the ends off some nice small okra pods. I lay my knife flat across the pods and hit it with my hand to smash open the pods. This allows the egg and crumbs to get inside the pods. Here is what they look like: Okra by Brownrexx, on Flickr Dip the pods into a beaten egg and then shake them in a bag with plain (not Panko) bread crumbs. Pour just a coating of oil in the bottom of the pan and lay the coated pods in the oil. Oven Fried Okra by Brownrexx, on Flickr Bake at 350° for 10 minutes and then flip them over with tongs to brown the other side for 10 more minutes. Here is the finished product. Drain on paper towels, cool and then pop into a zip loc bag in the freezer. They can be re-heated in a 350° for 10 minutes. Oven Fried Okra by Brownrexx, on Flickr

I do mine in the oven sometimes but slice it just like I do for frying and don't bread it. Just a little olive oil. Love it that way.
