I saw this in the newspaper before Christmas. It is a recipe to use up leftover pulled pork, preferably without being already drenched in bbq sauce.
Make or obtain dry rubbed pulled pork first.
Tamale pie
one 15 ounce can of tomato sauce 2 tsp chili powder 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp salt 1/2 cup cornmeal 1/4 cup flour 2 tsp baking powder 1 egg 1/2 cup milk
Mix the first 6 ingredients and put into a greased 2 quart casserole dish. Preheat oven to 425F. mix the remaining ingredients and pour onto of the first ingredients. Bake for 20 minutes or until cornbread is done.
Personal opinion, I think that it could be fleshed out with some cooked beans like pinto or black, maybe some whole kernel corn and jalapeños, some cheddar cheese in the cornbread. Otherwise it looks pretty bland to me but a secondary use for pulled pork could come in handy. Maybe pulled turkey or chicken thighs?

I made a version of this using chopped grilled chicken thighs, a can of chili flavor black beans, chopped up a half of one of those little pumpkins to add in . I threw in a couple of handfuls of pretreated taco blende cheese into the cornbread layer. Pretty much doubled the quantities since I used a 3.5 quart enameled pan that looks closer to a frying pan in shape than a dutch oven. It was pretty good. No pic because pretty good isn't always good and pretty.

You know, the saying is, "we eat with our eyes," but there have been plenty of foods - especially comfort foods - that I have had that were not pretty at all, but were absolutely delicious. For routine home cooking, I don't get too hung up on pretty. I think we (as a culture, not you specifically, mgulfcoastguy) have let Instagram and other social media make us too afraid to post pics of our "ugly but delicious" meals. And frankly, if it is delicious, we should be proud of our creations regardless of how they look.
