I just turned on the crock pot with this. I guess you could use an instant pot in slow cooker mode if it holds 5 quarts.
Indian Spiced Lentils with Spinach
5 cups chicken or vegetable broth 3 cups brown lentils, washed and drained 1 can diced tomatoes undrained, 14.5 ounces 1 cup finely diced carrots 1/2 cup diced onion 2 serrano peppers, seeded and finely diced 1 tsp salt 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp tumeric 1 14 ounce can unsweetened coconut milk 1 5 ounce package fresh baby spinach black pepper to taste hot cooked basmati or brown rice
in a 5 or 6 quart slow cooker combine all ingredients through turmeric. Cook on low 8 hours or high 4 hours, covered. Afterwards, stir in coconut milk and spinach, season to taste with salt and black pepper, then serve with rice.

I would love to eat it, but the only time I made a really tasty lentil dish I had so much gas that I never made it again. Maybe if I lived alone?

Ha, ha! There are many advantages to having only yourself and dog to feed!
