My stored, home grown potatoes were starting to sprout so I cut some into cubes and some into French Fry shapes, blanched them for 2 minutes and froze them. I did cubes last year and it worked out wonderfully well. I just thaw a bag of cubes, add some chopped onions and pan fry everything in olive oil. It makes a really tasty side dish for dinner. This year I tried some French fry shapes and blanched them for 2 minutes as well. I will toss them with oil and roast in the oven. I package everything as single servings for 2 people. I do similarly to you. But my husband likes them roasted so I generally make huge trays of cut-in-half Yukons or reds, mostly roasted but not quite. That way you take them out and shove them frozen into the oven and they finish beautifully. He likes them with olive oil and spices. We are very agreeable together!

Actually solargeek I also blanched some small ones cut in half for roasting. They were already in the freezer so did not get into the picture. I thaw them before roasting with olive oil and spices like you do.
