HOLY COW! I found a mushroom grower just miles from my house. Headed to his farm tomorrow to get shrooms. He has: Pink Oyster, Lion's Mane, Blue Oyster, Black Pearl Oyster, Golden Oyster, Mother of Pearl Oyster, King Blue Oyster and Wild Oyster clone! HOW COOL IS THIS? Now how do I cook them?

Well….I had a funny joke….but….
I don't use too many mushrooms, so i really don't know. I guess the button ones are the only ones Ive ever ate. Now I do say Shiitake Mushroom all the time. I learned it sounds better than saying Ah $hit.

spike , I love mushrooms, but never have enough of them to do anything really special. If they are fresh, I just like them sliced raw in salads. Or I throw them into spaghetti sauce or almost any kind of casserole or stew. My mom made a killer mushroom gravy for any kind of meat and potatoes. As I recall, she browned them in butter, along with onions, salt and pepper, and used half&half for the liquid. There probably was more to it, but unfortunately I never asked her for her recipe. She was an knowledgeable mushroom hunter from the old country, and gathered when she had the opportunity to go to forested areas in season. I do love deep fried breaded whole mushrooms though I have not had any in years.

I also have access to fresh mushrooms since the growers are close and supply my local supermarkets. I mostly use the white button or baby portabella. The white ones are very mild and the portabella have more flavor.
Sometimes I just slice then and sauté them in butter with a little seasoning added.
Last night I made one of my favorite chicken dishes which is Chicken Marsala and when I started I thought "darn, I don't have any mushrooms". They are really good in that dish.
Sometimes I made Salisbury steak with gravy, mushrooms and onions.
Portabella mushrooms are very firm and some consider them to be a good meat substitute in tomato sauces,
I have not tried many of the ones you listed so if I were you I would try them sautéed in butter first to see if you like the flavor.

Mushrooms are really good in spaghetti sauce. brownrexx,beat me to chicken marsala but I will raise with chicken marengo, it might take me a while to find the recipe. There was another recipe where you put mushrooms, maybe butter, brown rice in a baking dish and topped with lightly browned pork chops then baked. I probably haven't made the pork chops in 30 years so no idea if I could find the recipe. Just brown rice with mushrooms and soy sauce boiled till the rice is done is good. Sautee mushrooms and then scramble eggs with them.

spike I haven't tried all of those - the lions mane and a generic oyster mushroom they often sell around in the Asian markets, but that's all I've had, and they were sort of bland, even milder than buttons. I'd try them sautéed in some butter, with maybe a little shallots and thyme, just to find out the difference in them, and maybe use them in a mild rice or pasta dish, with some reggiano in it. I'd also look into how they might dry - some mild mushrooms are actually better dried, though I've never had dried oyster mushrooms.

Those Pink Oyster mushrooms are simply delicious! I made my usual mushroom and rice dish with them and it came out wonderful. Nothing fancy just saute the mushrooms in olive oil with minced onions and fresh chopped ginger. Add a nice knob of butter and soy sauce. Mix in cooked rice and hog out!
