On Wednesday when I was cooking, I had some extra raspberries and blackberries that needed to be used. It was probably about 2 cups of berries in total, about 60% blackberries and about 40% were raspberries. After making the Florida Cranberry Sauce, I had ~2.5 cups of chopped calyces leftover, too. So I tossed them all in a saucepan with the zest and juice of a lemon and sugar to taste, probably 1.5-2 cups sugar. (I should note that the blackberries were very sweet and had very little tartness. With tart blackberries, more sugar would be needed.) I cooked the mix down and blitzed it with a stick blender. I then strained the mixture through a fine mesh sieve. I ended up with a lovely Seedless Mixed Berry and Roselle Jam. (It's a refrigerator jam, since I didn't can it.) The jam has a great tart and sweet flavor. Since it's cookie-making season, I plan to use some of it to make thumbprint cookies. I suppose if I get really ambitious and dig out my star-shaped cookie cutters and rolling pin I could make Linzer cookies, But the thumbprint cookies are much easier, so they are more likely to actually happen. The rest of the jam will probably end up on toast. I do love a smear of a tart and sweet jam on toast.

I've never seen or eaten a Roselle, but your jam sounds excellent! I had a package of near to expiry refrigerated crescent rolls, and an almost empty jar of orange marmalade that I was trying to use up. So I put a small spoonful of the jam onto the thick end of the crescent triangle before rolling it up. They turned out pretty tasty, and actually better cold than warm.

Oh, those look tasty, and I bet my family would love those. september , the crescent rolls idea is a good one, too. Not to mention easy!

Easy is always the preferred method! You can make all kinds of delicious treats with crescent rolls
