I just brown some hamburger with rice add chopped tomatoes and tomato sauce and cook together then throw in some shredded cheese and mushrooms then stuff. Then I put it in the crock pot with a little water added in the bottom and cook until done.

I always use rice dressing in mine. Just had a bunch this past weekend. Brown 1 lb. (more or less) ground meat with 1 small chopped onion (vidalias are best!) & 1/2 chopped bell pepper, about 1 Tbsp. worcestershire, add approx. 1 c. water. About 1 tsp celery salt. Simmer about 10 min. You can add chopped tomatoes, if you like. Cook about 1 c. raw rice. Hollow out your bell peppers. (For my chopped bell pepper, I usually use the pcs. of the tops of the peppers I will be cooking. ) When the rice is cooked, mix with the ground meat (should be a tiny bit soupy, if not, add a little water & mix well) Stuff into your peppers, (this should fill 8-10 average size peppers), place side by side in casserole dish. Add about 1/4 c. water, cover, microwave 12-15 minutes. Let stand a few minutes before uncovering.
