Do you marinade, if so, what's in it? Do you use the store bought kind or homemade?

We marinade and use rubs. I don't know what is in them cauz we use store bought. John p.s. I promenade also.

I've used 'store bought' before, and usually been disappointed. As far as ingredients I use, that depends on the type of meat as well as the desired end-result. I do a Chinese char siu (BBQ'd pork) for ribs sometimes...Mmm. I have a basic salmon marinade that is soy sauce, ginger and garlic (guess that is kind o' Chinese also). The possibilities are endless.

We have tried a new grilling sauce, and it is delish!! Yes it's a pre-made sauce but it is worth it, it's called Awesome Possum Sauce.. yes it's a real sauce it's made by Lexis Smoky Mountain. Now it does have a pepper heat bite so some may not like it but....

I like to use Grill Mates marinade when I'm going to cook a brisket. Just for regular BBQ, I make one using Italian Dressing, mustard, onion powder, garlic powder, worcestershire sauce and olive oil. Oh, and Creole seasoning of some sort. When it's done cooking, then put on the regular BBQ sauce!

We tried this with grilled chicken tonight, and all we can say is YUM!!!
Watermelon Barbecue Marinade
1/2 cup watermelon juice 1/2 cup balsamic vinegar 1/4 cup brown sugar 1/4 cup soy sauce 2 tablespoons vegetable oil 2 tablespoons Dijon-style mustard 2 cloves garlic, minced 2 teaspoons red pepper flakes
To make watermelon juice: Process small chunks of watermelon flesh in a blender or food processor until they turn to liquid.
For marinade: In a glass, stainless steel, or ceramic bowl, combine the watermelon juice with the rest of the ingredients. Whisk vigorously to blend. Pour to cover meat or fish, seal with plastic or foil, and refrigerate for several hours or overnight.

I don't think there is any one sauce that pleases all! We had 17 over last week for a jerked pork buffet done on the smoker. Seems there is about 4 different tastes from the groups we have over: Vinegar Sweet Hot None One thing is sure.... We hardly have any smoked meat left each time ... LOL. Here in Tucson our friends are from a wide range of backgrounds and this seems to influence BBq taste preferences very much. Minn, Ohio, Ind, states (NO HOT) Tenn, Carolina's, (Sweet) Okla, Texas, Kansas (Vinegar fruit with a bite) These are just observations in general.. nothing written stone... So we always serve Hot Vinegar Sweet at every BBq.

I marinate pork loin in my fig bbq sauce for 24 hours.
