Last night, leftovers.
Tonight? Slow cooker chicken in a tomato basil sauce on GMO Free/Gluten Free corn pasta. Yum!

Eating this now. Set a couple green when ripe anthocyanin cherry toms on the plate for garnish. They taste good as does the sandwich.

Good to see my old thread back up. Today was Whataburger for lunch. I had spent hours getting a tire with a screw in it repaired. And teaching Walmart employees how to drive an electric car.

Like many days, leftovers were what I had for lunch. I had a portion of an easy slow cooker chicken dish I made earlier this week (a modified version of this recipe www.allrecipes.com/recipe/213636/slow-cooker-italian-chicken-alfredo/ with no mushrooms but some white wine added to balance the flavors - it needed some acidity). It was a tasty comfort-type food, but it didn't really taste like alfredo sauce. It has a strong chicken taste and no Parmesan flavor. The fresh parsley was really important to add a fresh, herby note, so don't skip that. We added some grated parmesan at the table. But DH and the kids liked it and it was easy, so I will make it again. It was a little salty, especially today when I ate it without any pasta. Next time I will use a low sodium cream of chicken soup. I also had some leftover asparagus spears with a little butter, salt, and lemon juice. So it was a nice meal that required only a couple of minutes in the microwave to reheat.

I had half a medium sized zucchini left in the fridge, so I decided to make vegetable soup with that as the main filler. Tossed in tomatoes, sweet red peppers, onions, zucchini, carrots, okra, celery, sauteed in olive oil and butter, added some water and chicken bouillon powder, some fresh green beans, spices and had myself an excellent lunch with a piece of rye bread and butter. Enough leftovers for a couple of days, all for me. Jim's not a fan of meatless soups.

Jim's not a fan of meatless soups. I am not a fan of beef in soups so that is why I usually dislike vegetable soup but yours looks wonderful and I think that I would definitely like that one. It looks yummy.
