Banana Bread
1 stick butter 1 c sugar 2 eggs 2 c A-P flour, sifted 2 tsp baking powder 1/2 tsp salt 1/2 tsp baking soda 1/4 tsp nutmeg 1 cup ripe mashed banana 1/2 cup chopped pecans (optional)
Preheat oven to 350F. Cream together the butter and sugar. Then beat the eggs and add to the butter mixture. In another bowl, sift together the flour, baking powder, salt, baking soda and nutmeg. Fold into the Creamed mixture, with the bananas and nuts. Spoon into greased loaf pan(s) and bake. This will make One large loaf or Two small. Bake the Large loaf for 45-50 minutes; small for 30-35 or until cake tester or toothpick comes out clean.
