Mine were spring planted. I just harvested some today. I harvest when I see the tops dying back. Some were harvested earlier and some are still going strong and aren't quite ready. Just watch the tops and you'll be able to tell when they are ready.

Ciao Rustybucket-
Mine have globe-shaped flower clusters growing on tall hollow stems. Should I bend those over or just wait until they nod on their own?
By the way, your Bogatyr Garlic never sprouted - very sad. How did yours do from the same batch (Idig Seed Train)?

I'm not sure about the seed head. My potato onions have not produced seed heads, but since you reproduce them from bulbs you could probably cut them off.
My Bogatyr garlic did OK considering they were spring planted and this was the first year growing Bogatyr in my garden. It's my understanding that garlic can take a couple of years to acclimate to an individual's garden. I did let some of the scapes stay so I also have bulbils. I just harvested the Bogatyr and will send you some once they are cured. That way you can get them planted this fall. That should give them a better chance of sucess.

I just realized I answered "potato onions" instead of "shallots". They are essentially the same, but don't want to confuse anyone. The answer would be the same.

Golden shallots and yellow potato onions are the same thing. They don't winter over very well for me but they refuse to be totally wiped out. Missed several small nests last fall and they survived and are already done. Too crowded so they are all small bulbs but that's what one wants to get big bulbs. Martin
