I'm thinking to start some smoking. What type of equipment do you use and what has been your experience. Photos would be great also.

the type of wood used makes a huge difference in flavor! I like Apple, Pear or Cherry for most things or a mix of mesquite at 25% and 75% A,P, or C. 100% mesquite is just a bit harsh all by it's self. Also get a smoker that you open from the front and not the top, you'll be glad you did

John I think you got a fair answer over on IDig. The last cold smoke house I saw was too long ago, and I never paid attention to any of the details you want to know. Please do some follow up as you do trials.

I use a kettle to smoke or grill. I prefer not to use gas for smoking meats, as I believe it gives a particular flavor profile I do not like. My real preference is for all wood, but, budget and space prevents me from using a stick burning cooker. I have a blog, with a load of pics of my food and cooking on the kettle. Ah, that makes sense then, it gives you more flexibility in that case. I do like vertical smokers and have never seen a firebox on a gas unit before.
