Unlike persimmon, quince only get a little sweet once fully chilled.
When eaten mostly green your ears may touch as the back of your head implodes.
All that said, contorted cultivars make an interesting bonsai. A-n-d then there's membrillo. I likes membrillo.
Grapenut was kind enough to offer some seed, I'll be planting it as soon as it arrives. More of the seed will germinate with a full winters slumber out of doors inna pot.
Mmm membrillo...

Rose family make some of the most durable (and driable) seeds. Thats saying less than many vegetable seeds that can store for years dry.

Quince is one of my very favourite fruits. In some ways I'm glad it's less well-known because I can usually get several pounds for my preserves when I find it. It would be lovely to have a tree, but in zone 5, I'm not sure it would thrive.

FWIW, contorted quince grow contorted spines, fish hooks really...
