I have been struggling with this Celiac disease which is a allergic reaction to Wheat Rye Barley, Gluten. It makes me not absorb vitamins and minerals, Thats the short version. I have been so sick! Then was on the mend. Then sick again. I have found out I am also intolerant to Corn. Anything with Corn in it. It helped tremendously to get off of corn products. But I am still having problems. It was brought to my attention it may be the meat I am eating because most meat animals are fed Corn. So I am going to do a test. I am going to eat grass fed meat for 2 weeks and see if it makes a difference. Then I will eat regular meat I usually eat. See if I still have all the problems I am struggling with. Is there anyone here with Celiac? Corn or grain intolerance? I am hoping my problem is not Grain intolerance. I have to read every label. I cannot eat at other peoples house because of Cross contamination. I am getting better at not Glutening my self. Or ingesting hidden corn products. At Thanksgiving everyone wanted finger foods thats a Celiac nightmare so I cook my own stuff and took it over. It is crazy!! At Christmas I just ate meat and potato we took over.

Sounds like a sensible approach to the meat issue! My niece is in the same boat that you are in. It was a struggle, when she first came over from Ukraine. Of course this was long before they started marketing special foods. My heart goes out to you over this. But at least you can enjoy my two favorite foods, meat and potatoes!

Yup Meat and potatoes lol I sometimes mix it up and eat a sweet potato lol Actually last night was Steak , Fried Kale, And fried potatoes.

I'm sorry to hear about the Celiac. I don't have it, but I know quite a few people who do. I have one friend who sounds similar to you- she has to be hyper-vigilant with her label reading, as any gluten will knock her out for weeks at a time.
If you're going to have celiac though, this is the time to have it! The options available to someone who has to be gluten free are SO much better than they were ten years ago. It is a bummer that you had to add corn to your do not eat list, but I bet you are right about the meat being contaminated by an animal's diet.
I'm sure you already have products that you like, but I have eaten baked goods made with Pamela's gluten-free baking mix, and I couldn't tell they were gluten free. Bob's Red Mill also has a seperate facility for their products that are labeled gluten free, so there's no chance of cross-contamination. We actually have a local cupcake bakery that makes all gluten-free cupcakes that are to die for- they also order in breads from another gluten-free baker. It really is amazing how far gluten-free has come! I wish you luck in figuring out the meat.

Thanks Iz and Lady , You know I am getting so used tho this diet. Altho I am still having some issues, not sure what is causing them. But it is getting easier and easier to deal with it. And yes buying stuff Gluten Free is not hard nowadays! But so much GF stuff has Corn products in it. But what it really comes down to is eating natural foods. Meat, Potatoes , Rice, You know fresh veggies , it has made me re-think what junk is really in the american diet. I Weighed almost 200 lbs. I am now 157 LBS I was so excited when I weighed myself!! I am 5'7' I am normal looking now. Don't have that Wheat Belly now as they call it.

Sorry to hear about your problem with celiac. I know a couple people with the disease, one mild, the other extreme, like yours. The one with the worst has been dealing with it for many years, and is amazed how much easier it is to buy things these days, though, as you've found out, it can be tricky. She's gotten to where she cooks almost everything from scratch, so she doesn't have to really check many things, except statements like "this may have been processed in a factory that also prosseses peanuts, wheat,....etc." It is amazing how many things I see that kind of statement on.
One thing I got them hooked on was rice and glass noodles, as replacements for pasta. While there are many now on the market that are gluten free, the prices can be prohibitive. And tapioca starch can be used in place of cornstarch as a thickener. One of my friends told me that she had seen some of these things in a suprmarket at about 4 times the prices they are in the Asian markets, simply because they are listed gluten free.
Good luck with your battle with this disease. I'll be interested in hearing about your meat experiment.
