I am not sure how to tell if they are ripe for picking.. I just don't remember how to tell if they are ripe... what do you look for?

It depends on the type. A green bean is picked young and tender. A shell bean is allowed to fill out the shell, to " plump up." You could also let it dry.
What are you dealing with in particular?

In November, you'd be looking at dry shell beans. Some will have the skin remain intact and smooth. With other, the skin shrinks and wrinkles. If the beans inside are firm, they are ready to pick. Threshing should be held off for several weeks to allow every pod to dry to the same percentage of moisture.
