octave1 , hairymooseknuckles , sounds like a delicious way to make green beans, but since I hate every extra minute cooking, just a quick short boil and butter and salt is about all the time I want to spend.
Wish I had someone to cook for me.

Speaking of cooking beans, and not over-cooking, I saw something on ATK a few years ago that was simple, and it works! The guy described what he does with beans, asparagus, and some other veggies, which are usually given an ice bath. What he did was undercooked the veggies - about 4 minutes I've found good for beans - drained them, and quickly spread them out on a sheet pan, patting them dry. As they cool, they finish cooking, plus dry off some. This dryness makes them great in salads, or anything with sauces or butter, as it doesn't water down the sauce, and seems to help it cling to the beans. This also saves water, as well as ice.

hairymooseknuckles, another delicious way to serve green beans is with tomatoes-Italian style. In a large skillet heat oil and chopped garlic, when the garlic is a bit blonde add diced fresh tomatoes, salt, pepper and cook for about 10 minutes or so. Add the cooked beans, stir and saute' for a couple of minutes. Turns the flame off and add any fresh herb or your choice: chopped parleys, finely sliced basil leaves, oregano or whatever you like. Serve with rustic bread. This dish is almost a full meal if you pair it with some protein food., and it's really yummy.

octave1, hairymooseknuckles, you guys have given me some great ideas for cooking green beans. I am actually bored with just boiling and buttering them. I cook brussels sprouts the way you described but I didn't think to do that with green beans.

I cook brussels sprouts the way you described but I didn't think to do that with green beans. 1 slice of finely chopped bacon is a good addition as you sauté the onion. Lots of flavor added economically.

Tennessee Cut Short. The Mosquitoes ate me alive! I was only out there long enough to tie string to a mesquite branch. I’ll figure out something better tomorrow. Grrrrr! I put him on the west side of where my old tractor sits. There’s a pretty good sized mesquite tree. I’ll fix it so I can keep the Johnson grass in check. Maybe, if I’m lucky. I’m tired.

octave1, hairymooseknuckles, tonight I blanched some freshly picked green beans. I sautéed some chopped Vidalia onions in butter with the beans and they were very good. I think that fresh mushrooms would work well too. I may try that next.

I really didn't want to go out there again today, but I had to - can't go more than 2 days without picking beans, without overgrown ones. As I said before, those blauhilde purple ones are going crazy! Good thing about those, they're easy to spot! About 2 quarts of beans, half Blauhilde, and half everything else! 8-11 by pepperhead212, on Flickr I picked 6 more cukes today, and I have to do something with all of those today!

I didn't pick today, but I could have, easily! This is from late yesterday, and, again, the Blauhilde were about half the harvest! I noticed that the Thai green long bean was hollowed out - maybe due to the heat, as the Thai red long bean and Red Noodle Beans didn't do this, except in very hot weather. And I noticed that I have some Thai red long beans growing - either a volunteer, or just very late! And already I see more red long beans than I've gotten on the green plant{s}. Again, Blauhilde, and all other varieties, with less greens! 8-13 by pepperhead212, on Flickr

I couldn't pick any tomatoes or beans today, since everything was wet all day, but I had to look and see what I had, in the short time it wasn't raining, later on. And this had occurred since yesterday, and had to take a picture! A pole bean vine climbing a long bean! by pepperhead212, on Flickr

I steam blanched 56 oz of the beans I stringed, and snapped to size (sort of). I did this in the steamer basket in the IP, in 3 batches, and spread it out on baking sheets, to cool and dry. Using this method, nothing gets sucked into the foodsaver! I also steamed 12 oz of Thai long red beans, for that pasta dish later. The green beans were vacuum sealed, in two 12 oz and two 16 oz bags. 56 oz. of green beans, ready to go into the freezer. by pepperhead212, on Flickr Oh yeah - after this, I picked at least another pound of beans! My beans are done for the year stratcat, and now your beautiful picture makes me hungry for some. I don't usually plant a late crop since the Mexican Bean Beetles show up and get more beans than I do. Actually they just take bites here and there and make them too ugly to eat.

You have a good while until frost, right hairymooseknuckles? So you should have plenty of time to get some. I couldn't remember what kind of beans cutshorts are, and I ran into this blog post: danatdr.blogspot.com/2014/08/the-cutshort-bean.html He calls them Tennessee Cutshort, not Tennessee Shortcut, but these are the same beans, right? As soon as I saw the picture of the plate of cooked cutshort beans I remember eating this kind of bean at Granny's house when I was a kid. I might have to get hold of some seed and try these next year.

Laura_in_FL , Yes it should be cutshort. My brain probably did that. When I speak, I do that too. I think I have some kind of short circuit that makes me do that. My wife knows what I mean when I say stuff like “I’m going to put the refrigerator in the beans.” My Oklahoma friend George supplied me with seed. He and I have seed swapped for years. He received his seed from family members. You can read about it here. In the past, I’ve tried a lot of beans, but since I prefer an Appalachian type bean, I think this one may be what I’ll grow for eating. I won’t eat any this year as I’m trying to stockpile some seed.

Im sorry Laura_in_FL , I meant to tell you that yes, I still have lots of time. Probably close to 2 months give or take a few days. My hope is to gather some seed. I don’t plan on eating any this year. The old grasshoppers bout to eat all the vine plum up. I tried to kill one yesterday and stuck a mesquite thorn in my left hand. It hurt like a big dog and it’s a bit sore today. I think my wife got most of the thorn out, but It sure pussed up today. Those things will grab you.

Ouch, those mesquite thorns sound painful! I hope it heals well - unless "pussed up" means something different in Texas, that sounds like the puncture is infected. That was quite an interesting post that you linked me to. I had the impression from the "half-runner" description that it was shorter, like 3' tall. But it sounds like it will climb right up a trellis and get tall if it has the chance, and will handle heat.

Laura_in_FL, No I meant the same as your thinking. Like a dumbA, I waited a few hours before I asked wife to get the thorn out. Probably gave it time to get infected. I’ll be alright, just rub some dirt on it and it’ll be ok.
