How do you know when it's time to pick cabbage?

After the head gets big and just before it splits open. We lost a couple of heads our granddaughter was going to take to the county fair because we waited too long. It is a tricky thing to figure out. Maybe a cabbage person can give us a few tips.

It depends on the variety. When I did grow it, I preferred the smaller ones. Now I just grow all those other greens, as I could never store much cabbage.

The first year I grew cabbage I left the heads growing thinking that they needed to get bigger and then when I picked them they had grey tips to some of the internal leaves. Turns out this is because the heads were too old. I also had some split open. I even heard one split while I was standing nearby right in the garden. I heard a cracking sound and sure enough it was one of my heads of cabbage that split wide open.
Now I look at the days to maturity and I harvest the heads within 1 to 2 weeks after that time. Sometimes I wait a bit longer if they have not had much rain like now but I have not had any head split open since I started doing it this way.

If your cabbage heads are at maximum maturity, and you don't want to harvest them yet, there's a way to prevent splitting. Grasp the head with both hands and give it a quarter turn. That will break some of the feeder roots and stop further growth.

You need to know what variety you have to determine when you need to pick it. some varieties are early maturing and rather small heads such as golden cross or early jersey wakefield and others are late... like late flat dutch and can grow to 12 pounds maybe more and be 110 days to maturity.
