Do you pickle any veggies and if so, what kind?

In a normal year, yes, I pickle.
I pickle cucumbers, pepperoncini peppers, green tomatoes mixed with peppers and onions, carrots, beets, and whatever else strikes my fancy. One of these years I would love to make a giardiniera with cauliflower. I love a little bite of pickle with my meals!

Usually just cucumbers and various peppers, though some of the cucumber and pepper pickles also have onions in them. I should probably pickle some onions all by themselves sometime - they are yummy. Oh, and I have pickled okra before, too. Like ladymarmalade said, one day I'd like to try a giardiniera with cauliflower and other veggies. I have yet to have enough cauliflower at once to pickle, though. (Using the cauliflower fresh always gets first dibs in my house.)

I only do refrigerator sweet pickles for my husband. I ferment pickles for my own use, but they eventually go into the fridge too. I wish I had the energy to get out the canning equipment, but chances are slim of that happening.

Beets, peppers, cucumbers. I've never tried zucchini, but my neighbor loves them. When the season is mostly over, I'll just pickle whatever veggies I have on hand.

Usually just relish and beets. Sometimes bread and butter pickles. Hubbyman won't eat anything pickled so it is just all for ME!!

I pickled jalapeños this year. I have done : jalapeño cucumber relish, kosher dills, Thai peppers, barbecue sauce, pickled pumpkin and probably some other things.

I do a lot of quick pickles to snack on - 3 c cucumber sticks in a mason jar, plus 1/4 c each of sugar and white vinegar, plus a little salt. I shake it when I walk by it in the kitchen, maybe turning it upside down, and it's ready in 3-4 hours. I put it in the fridge, and it's there when I want it. I drain it, and season it with nam prik pao, or some sesame oil, or other seasonings.
I also make escabeche, with jalapeños, and other peppers, as well as carrots and onions. I add extra onions in this recipe, as well as when I make B&B pickles, as I really like the pickled onions. I pickled some of those bottle gourds; I have to try those soon, to see how they turned out, to see if I want to do it again, as I just harvested more of them.
It's been a while since I made any, but I used to make picalili relish every fall, with my green tomatoes.

I make refrigerator dill pickles and zucchini pickles. A friend just gave me a recipe for some pickled mixed vegetables like the ones that they serve at Isaacs Restaurants so I may try that this year.
I have never made pickled beets but am planning on trying that this year too.

Hahaaa. Sorry folks just teasing. Lots of stuff I like you all might not like either.
For Instance I like grilled peanut butter and jelly sandwiches. Yes, you grill it in butter just like you would a grilled cheese.
I also like fried eggs and peanut butter sandwiches.
I know, I know, I'm a weird one.

I was just looking for a recipe for a sauce, and found another odd pickle that I've made many times - a Malaysian pickled pineapple. A delicious side dish with Thai and Malaysian food.
