Sometimes overnight and sometimes with the quick soak method. Same here. The fresher the beans are, the less of a soak that they require. I have read that dry beans from the store can be several years old. Still good though. I also learned another little tidbit from reading about dry beans. Some people had been saying that it took so much longer to cook their beans than mine. I discovered that cooking with hard water can make them take longer to soften during cooking. I also discovered that I can soak mine in the crock pot insert overnight, then change the water and cook on low all day and have a nice big pot of beans to divide into containers and freeze. This gives me already cooked beans to use in recipes. I am growing 6 varieties of dry beans this year. I just love seeing all of the colors and sizes and they are ready for harvest in the Fall when I am done with all of the preparing and chopping of other veggies to freeze.

Rarely do I soak mine. If they are old ones I might, and I might brine them, to keep them from falling apart, but usually I don't worry about it, because many things I grind up or mash beans in. And many of the beans I cook are lentils, and smaller beans, which don't need soaking.

Rick Bayless doesn't believe in soaking beans either.

I soak all beans except lentils or split peas. We must also have hard water because a crockpot on low will never get them tender.

Sometimes yes, sometimes no. Depends on circumstances. The pressure cooker cures many evils. When I used the solar oven more, beans were a favorite thing to cook. Unfortunately, I don't eat beans these days. My favorite use was spicy beans in fresh corn tortillas with lots of cheddar cheese.

All I know is that with all this bean talk there is going to be some pinto beans and ham hocks with cornbread in my VERY near future!!

So, hairymooseknuckles, do you also have all of Bayless's cookbooks? My favorite one is Rick Bayless's Mexican Kitchen, which has many delicious recipes, including that original salsa negra, along with a number of recipes using it.

I always soak beans. I soak lentils too, even though many people don't. I like all my pulses to be done until really creamy. Some may say "overcooked", but that's how I like them.

No, I don't have any of his cookbooks. I watch him on TV & Youtube. I gave Mom most of my cookbooks when we went on the road. I only kept a few. When you downsize into a motor home, it's very hard to keep everything. Although I still have 2 buildings full of stuff. I bet if I ever need any of it, it won't be worth 2 plug nickels. Between lizards, mice and other critters that seem to find their way into outside buildings no matter how sealed up it is.

When you downsize into a motor home, it's very hard to keep everything. I hadn't thought about that. You would probably fill a motor home half way, with all my cookbooks! Something I was going to do before my accident - build another bookcase. lol
